by Cate on May 16, 2007

Another ARF/5-A-Day is upon us, and tonight’s roundup has no shortage of fantastic, healthy inspiration. Let’s get to it.

Sarah from Cucina Bella is up first with a Two Minute Caprese Salad and her first attempt at a delicious Rachael Ray recipe.

Inspiration leads to a new creation of Peanut Butter Banana Bread at Cooking Is Medicine.

More Bread and Cheese Please gives mangoes a go with her Chicken and Mango Rice:

The Cookbook Junkie takes up the sauce for potatoes and makes a delicious batch of Righteous Red Potatoes:

Cook. Craft. Enjoy. gets into the Spring of things with her Easy Strawberry Napoleans:

Newcomer Live to Eat, Drink, Laugh and Enjoy Life goes the comfort food route with her Scalloped Potatoes:

Sara from I Like to Cook sends dessert our way with her Raisin Cookies:

Another newcomer, Should You Eat That, joins in with Balsamic Beetroot and Baby Carrot Salad after her first visit to a farmer’s market:

Teczcape gives us our second mango contribution tonight with her Mango Slushy:

And lastly, my own contribution. After being in an all-day meeting today, I just didn’t have the energy to spend too much time in the kitchen tonight, so I was looking to keep it simple. I ended up going with a Chopped Bacon, Lettuce and Tomato Salad. I haven’t made this one in awhile, and it never fails to disappoint.

A year ago today… the pet store – a very dangerous place.
Two years ago today… Sunday comfort food.
