ARF/5-A-Day #118

It doesn’t happen that often, but when it does, it sucks.  A failed recipe.  A recipe that absolutely could not be salvaged.  With a meeting tonight at Nicholas‘ school, dinner had to be fast, and to save even more time, I wanted to avoid a trip to the grocery store and use ingredients I already had on hand.   When putting away groceries the other day, I spied a can of coconut milk that was bought for a long-since-forgotten-never-made recipe, so when I came across a recipe for Thai Shrimp Pasta in a recent issue of Quick & Simple magazine, it was kismet.  I had a small bit of frozen shrimp to use up, added some roasted tomatoes to fulfill my ARF/5-A-Day requirement, a bunch of cooked pasta, fresh cilantro, salt, pepper and curry powder and dinner was done. 

I twirled one bite on my fork, keeping an eye on the clock, and gave it a try.  Yuck.  But maybe I was too harsh, I thought, as I went in for a second bite.  Nope.  Still dreadful, as I pushed my plate to the side.  If I had more time and motivation, I suppose it could have been salvaged (perhaps making the sauce with a little bit of peanut butter, keeping in the Thai realm, but bringing it a little more Asian), but then am I just throwing away more good ingredients?  In this case, I think so.   I was bummed (and now hungry!), but they can’t all be winners.

Sorry to hear about the pasta! Though that ingredient list did sound good. . .

Well, lots of other recipes to try in this week’s roundup. . .thanks for putting it together!

Hug…we have all been there. Me way to many times to count. Even stuff I have succesfully done in the past I can manage to screw up everynow and then.
