Recipe: Two Cheese Egg Frittatas to Go

Weekday breakfast has always been one of my challenges.  And it remains so.  The mornings are crazy, trying to get the kids up and to school and me to work on time.  All while making lunches, checking backpacks, and making sleeping beauties move at the speed of light.  Children that don’t wake up on their own are not happy children, and then rushing them only compounds the situation.  So breakfast?  Usually the grab-and-go variety.

The folks at Land ‘O Lakes and Betty Crocker asked me, along with a few other bloggers, to come up with a new breakfast recipe highlighting Land ‘O Lake products, natch.  Frittatas are one of my favorite on-the-run breakfasts because you can make them the night before and totally customize them to suit every little picky eater’s palate.  Aside from not having to rush to be somewhere, what more could you want?

I’ve made our frittatas with both ham and prosciutto (I’m a sucker for its salty goodness), switched it up and experimented with various cheeses, and even caramelized onions and sauteed vegetables. Just a few minutes of kitchen time, and you’ll have breakfast for your whole brood for the week.

Just a quick programming note, and I’m off to take advantage of a semi-early night… I’m going to be adding Friday nights to the publishing schedule here, and it will focus solely on product reviews.  Some of it will be stuff that we’ve been asked to try out, some of it will just be new items that I’ve discovered, and some will be introducing you to my new favorite Etsy shops or heck, my new favorite nail polish.  I have a crazy backlog of things to share with you, so hopefully with the scheduled “product day” being added to the rotation, it will be just the impetus to get a move on.  And hey, with the holidays (ack!) coming soon, you just might find the perfect something for those hard-to-shop-for peeps on your list.

Is it best to freeze them for later or how long can you store in the fridge. These look awesome!

I don’t recommend freezing them, as I’ve found they tend to become a bit watery upon defrosting. Couple days in the fridge should be a-ok.

There are definitely mornings where I just don’t have the energy…and that’s SANS kids. These frittatas sound delicious! I love a good egg dish in the morning.
