Recipe: Broiled Avocado with Parmesan

Broiled Avocado - Close-Up
I don’t have to hear any other words after the word avocado.  Say avocado and I’m there.  Friday night, I was unexpectedly kid-free.  Which usually means I don’t have a formal dinner.  I’ll usually forage.  Or do a little of this and a little of that.  Or skip it altogether.  But I happened to spy this recipe for broiled avocado, and it quickly became dinner.  Mostly because I had avocado on hand, it took all of five minutes to make, and was easy to eat while catching up on some work at my desk.

Parmesan cheese.  Hot sauce.  Lime juice.  Avocado.

That’s it.

Because Friday night was still featuring soaring temperatures, I broiled these in my toaster oven, to save heating up the kitchen, and that worked beautifully.

You break through the slightly salty, crispy Parmesan crust and get rewarded with warm, creamy avocado, with a slight hint of hot sauce and lime juice.

OMG.  So good.  So very good.

If you’re looking for a quick snack, a super light meal, or have avocados on your counter that need to be used up pronto (me! me!), make this.

Now, just a quick word about sponsored posts. You may have noticed there have been a few more than usual here. As a blogger, I am afforded a number of really amazing opportunities to try out new products, create recipes, take trips and more through a variety of blogger networks that I belong to. I am absolutely blessed with these opportunities, but I also want you to know that I am incredibly selective about which ones I choose to participate in. I don’t want to write about something just because a company is waving a few dollars around. It has to make sense for Sweetnicks (for example, craft projects are a no brainer, sleep aids not so much), and likewise, my site has to make sense for the company in terms of marketing.

Over the past week, there have been more sponsored posts than usual. Usually, I try to space them out more, but in this case the sponsor’s scheduling needs caused a situation where a lot needed to post in a short time.

So, why do I accept these sponsorships? Simply put: The occasional sponsored post does help defray the costs and time involved with running a web site, so I love them for that, but I want to be tuned in to what readers want to see here too. Please do know that I only choose ones that I think are a good fit though.

And lastly, if you visited my site last night or this morning, it might have looked like new posts hadn’t been added.  I was in the process of doing some behind-the-scenes tinkering, so my posts from Saturday and Sunday weren’t showing up.  Hopefully all is back to normal now.

Tomorrow?  Crafting with Mod Podge!
Wednesday?  A Wordless Wednesday look at our kitchen counter.
Thursday?  A recipe for a Super Large Turbo Charged Chocolate Chip Cookie (Madeline’s favorite!).

Even though I write them, I often find sponsored posts to be annoying on other people’s blogs, but not yours. I think you do them really tastefully and weave them into whatever topic you’re writing about really well.

This recipe looks pretty much heavenly.

Very interesting. My avocado usage is limited to only a few types of preparation.

These look good.

I can’t wait to go pick up some avocados so I can make this… and, I may be the only one eating, but that’s ok… it sounds incredible!
