Recipe: Fudgy Double Peanut Butter Brownies {National Brownie Day}

Celebrating National Brownie Day with little bites of fudgy heaven.

Fudgy Double Peanut Butter Brownie - middle-001

Over the weekend, Nick and I had a conversation about his favorite cookies, and he ranked the top five for me. But, truth be told, the way to his heart is through a batch of homemade brownies.

So, of course, when I found out that today was National Brownie Day, we had to celebrate accordingly.

And this recipe for Fudgy Double Peanut Butter Brownies is just what the, ahem, holiday ordered.

A fudgy brownie base punctuated by swirls of peanut butter goodness, topped with bits of Reese’s Peanut Butter Cups.

As I said on Instagram … they’re fudgy, a wee bit messy, and you have to love peanut butter.

If that describes you, then you need these in your life.

Since it starts with a box mix for the brownie base, these are pretty simple to make.

And since it ends up with chopped up Reese’s Peanut Butter Cups, this is the perfect recipe to get rid of any leftover Halloween candy you might still have lurking around.

…meekly raising hand…

And, to be quite honest, any day is a good day for brownies. Here are some of our other favorites:
Symphony Brownies – a super soft center, these brownies are a house favorite.
Mint M&M Brownies are simple to make, and an unusual twist on the traditional brownie.
Another take on minty brownies, this time with Oreos, these triple layer babies are a showstopper.

1 chocolate brownie mix
8 oz package 1/3 less fat cream cheese, softened
14 oz can sweetened condensed milk
1/2 cup all natural creamy peanut butter
12 oz bag milk chocolate chips
3 tablespoons heavy cream
12 Reese’s Peanut Butter Cups

Heat oven to 350 degrees. Grease a 9×13 baking dish. Prepare the brownie mix, following box directions. Spread the batter in the baking dish and set aside.

In a large bowl, beat the softened cream cheese with the sweetened condensed milk until fluffy. Add the peanut butter and mix well. Spread the mixture evenly over the brownie batter.

Bake for approximately 40 minutes, or until the top layer is set. Cool.

Melt the chocolate chips with the heavy cream in a microwaveable bowl for 1 minute. Stir until smooth.

Spread melted chocolate mixture over the brownies. Chop up the Reese’s Peanut Butter Cups and spread over the top.

Let the melted chocolate layer set, and then cut and enjoy.

These sound awesome! I love when a recipe starts with a box mix and dresses it up beyond recognition. And chocolate + peanut butter will always be a swift way to my heart!

You cannot go wrong with sweetened condensed milk, peanut butter and brownies. I think you have achieved brownie nirvana there.
