Recipe: No Bake Blueberry Cheesecake

by Cate on August 4, 2015

When you want a quick and easy dessert that is sure to impress, look no further than these No Bake Blueberry Cheesecakes.

Truth be told, I’m not a huge cheesecake fan.

In fact, I pretty much never eat it, unless it’s at the Cheesecake Factory.

Because THEIR cheesecake is amazing.

But despite my lukewarm relationship with cheesecake, when I spied the recipe for these babies on Nutmeg Nanny’s site, I made it the next day.

And by “next day,” I mean at 10 pm, the night before Fourth of July.

But, honestly, I could … because they’re that simple to make.

Smooth and creamy, and assembled in mere minutes, they were delicious. The addition of blueberry jam was an interesting twist, and I would totally do that again.

Because these are individual servings, they’re perfect for entertaining. And also super easy to transport, which means they’re great when someone ELSE is doing the entertaining, and you’re bringing dessert.

Even if it’s not the Fourth of July.

You can find the recipe here on Brandy’s site; the only thing I did differently was I skipped the vanilla bean paste. Be sure to take a few minutes and browse her site – you’ll find lots of other deliciousness just waiting to be made.

How cute! Plus it’s so much more fun when you get your own little cake to eat.
