Recipe from Christie November 2005 Supper Club

To make Carrot Spritzer, process 3-4 fresh carrots in a juice extractor. Pour 3 ounces of carrot juice and 1 tablespoon of freshly squeezed grapefruit juice into a tall champagne flute. Top with 1-1/2 oz of chilled champagne. Garnish with a carrot peel and serve immediately.

Perfect for celebrating patriotism, you can make red, white and blue versions of this cocktail.

The above takes care of your red version. For blue, swap out the vodka and use blue curacao, and for the white, leave out the strawberries.

In a blender, combine crushed ice, vodka, coffee liqueur and Irish cream liqueur. Drizzle in Chocolate syrup. Blend until smooth. Pour into glasses and garnish with whipped cream.

Warm up ingredients (in the microwave works fine). Can serve warm or at room temperature. Looks nice in a punch bowl.

Combine sugar and water in a medium saucepan; cook over medium heat 5 mins or until sugar dissolves, stirring constantly. Remove from heat, stir in rind. Cool completely. Stir in vodka and lemon juice.

Sterilize 2 wide mouthed 1 qt jars. Divide vodka mixture between jars. Cover each jar w/metal lid & screw on band. Store in cool, dark place three weeks, shaking jar every other day.

Line a fine mesh sieve with a double layer of cheesecloth; strain mixture through into a bowl. Discard solids. Return liqueur to jars or clean decanter; stor chilled in refrigerator or freezer. Yield: 4 3/4 cups. Keeps in freezer for up to a year.

To serve, pour over ice with two parts sparkling water for a cool, delicious lemon spritzer. To serve straight up, coat the rim of a chilled martini glass in lemon juice, then dip the rim in sugar. Garnish with a slice of lemon.

6-8 servings
Put limeade into a large pitcher. Stir in rest of the ingredients. Serve.

Serves 2

Shake ingredients in a shaker and put in chilled martini glasses. Put pomegranate fruit into glass as garnish.

Serves 8

Cut strawberries into eighths and place into a large jug with watermelon and lime. Sprinkle sugar over the top, then gently pour in liqueur. Leave at room temperature for 1 hour. Stir in wine and lemonade. Serve.

In a 2-quart pitcher stir together wine, strawberry schnapps, and sugar until sugar dissolves. Add sliced strawberries and chill for 1 to 4 hours. Serve over ice. If desired, garnish with whole strawberries. Makes 5 or 6 (about 8-ounce) servings.
