Cherry Coconut Bars

Yields: 3 dozen

1 cup flour
3 tablespoons confectioners’ sugar
1/2 cup cold butter

Filling:
2 eggs
1 cup sugar
1 teaspoon vanilla extract
1/4 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped walnuts
1/2 cup halved maraschino cherries
1/2 cup flaked coconut

In a bowl, combine flour and confectioners’ sugar; cut in butter until crumbly. Press into a lightly greased 13×9x2 baking pan. Bake at 350 for 10-12 minutes or until lightly browned. Cool. For filling, combine the eggs, sugar and vanilla in a bowl. Add the flour, baking powder and salt. Stir in the walnuts, cherries and coconut. Spread over crust. Bake for 20-25 minutes or until firm. Cool. Cut into bars.
