Ham Salad with Biscuits

This is definitely one of my favorite, light, go-to summer recipes, and I make it many times during the warm weather, and even long after. The olives give it a great bite, and the mustard a nice tang. It’s generally a crowd pleaser, though Nicholas won’t go near it. The recipe is very simple to make and just requires a bunch of chopping and mixing. I serve it inside Pillsbury Grands’ biscuits and it makes for a light, satisfying, cool meal, courtesy of Rachael Ray.

Two years ago today… another great salad recipe, and a silly dog.

Miss Leslie’s Ham Salad

2 tubes, 6 pieces each, large bake-off biscuits (recommended: Pillsbury brand, from dairy aisle of market)
1 pound cooked ham from the deli, 1/4-inch thick slices, diced
3 ribs celery, from the heart, finely chopped
1/2 cup salad olives with pimento, drained, chopped
1 jalapeno pepper, seeded, finely chopped
4 scallions, finely chopped
1/4 cup chopped flat-leaf parsley - a couple of handfuls of leaves
1/3 cup mayonnaise, just enough to bind salad
3 tablespoons prepared yellow mustard
3 tablespoons dill pickle relish
Salt and black pepper

Prepare bake-off biscuits to package directions, 8 to 10 minutes in the oven. Cool biscuits on wire rack.
Combine all remaining ingredients in a bowl and adjust seasonings, to taste.

Split cool biscuits and fill with Leslie’s DEEELICIOUS ham salad.

    I’ve had tuna and chicken salad, but not ham. Looks great.

    I agree with Kelly .. I’ve never had ham salad either but it looks like a good one to try.

    Hmm, I’ve never thought of making ham salad like that, all chunky. I love traditional ham salad, with the ham all ground up.

    My Nicholas would love this but he would probably just pick out the chunks of ham.

    Darn, I saw biscuits and was hoping for a biscuit recipe! I’m on a mission to make great homemade biscuits. I hope it’s easier than it sounds..haha

    The Cookbook Junkie - one of our not-to-local grocery stores has a ground ham salad that they make that is good too. Haven’t seen it around here though.
