Peanut Butter Cup Cookies

Last week, the day after I made these, I went into the kitchen to grab something and noticed that there was a dish towel on top of the plate of cookies.  Thinking it was probably just one of the kids, I put the towel away and went on my way.  The next day, the same thing happened, a dish towel covering the plate of cookies.  It turns out it was the babysitter.  She was so addicted to the cookies, she had to cover them with the dishtowel to resist the temptation.  Too funny.

When I gave one of the cookies to my mom to try, I warned her.  “You have to really love peanut butter to like these.”  She was already mid-bite, looked at me and said, “wow.”  That tells you how delicious they are.  Besides liking peanut butter, I think you need a drink right next to you to wash it all down with.  But hey, that can be said about a lot of cookies.  What goes better than a tall glass of milk?

I made these one morning while Nick was getting ready for school.  They take about 10 minutes to mix together, 10 minutes to bake and 10 minutes to plop the little peanut butter cup into the warm center when they come out of the oven.  Thirty minutes to make your most favorite peanut butter fan swoon.  Sounds good to me.

1-3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup peanut butter
1/2 cup packed brown sugar
1 egg, beaten
1 teaspoon vanilla extract
2 tablespoons milk
40 miniature chocolate covered peanut butter cups, unwrapped

Preheat oven to 375 degrees F (190 degrees C). Sift together the flour, salt and baking soda; set aside. Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well. Shape into 40 balls and place each into an ungreased mini muffin pan. Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

These are my go-to cookies when I need some childhood comfort. My mom always made them when I was a kid. I can’t make them too often though because like the babysitter, I would have to cover them or something to keep from eating them.

I am possibly one of the biggest peanut butter addicts in the world. And I’m even more addicted to peanut butter CUPS. Whenever my mom used to buy them as Easter candy, the bag one would be gone in less than a week. These cookies would be dangerous to have around but I think I’m gonna have to make them!

Joanne, I’m with you. Peanut butter cups are my weakness.
The big ones they make for holidays are my drug of choice! I have three bags of the minis right now because I am making a peanut butter cup cake for hubby’s birthday this weekend. Now I need to go stock up on some milk! I will probably make these cookies if I have any pb cups left over.

Those look so delicious! I am a huge peanut butter fan, so I’m sure I would love them! That’s so funny about the baby sitter. Even when I can’t see cookies, I still find myself detouring on the way to do whatever I need to do to grab one, or two (or three)…
