Recipe: Boiling Cookies (aka No Bake Cookies)

I thought I first fell in love with these cookies when I discovered them at Governor’s restaurant on one of our trips to visit my sister at college in Maine many years ago.  But then come to find out, that my mom used to make them for us when we were kids.  My memory is apparently spotty.  I have yet to find a recipe that is as awesome as the ones from Governor’s, but this recipe is a mighty fine close second.  That and it saves that pesky 8 hour trip to Maine to visit Governor’s.

Mix a few pantry ingredients in a pan on the stove.  Drop by spoonful onto some wax paper.  Wait for them to set.  And try to hold yourself back from eating your weight in cookies.  Nick loves these.  I love them.  Madeline loves them.  Needless to say, we don’t make ’em too often.  Make them and devour.  Share with your friends, neighbors, and those who you need to say a special thank you to.  Or hoard them all to yourself while watching the Real Housewives of New Jersey duke it out during their reunion special.  I won’t tell.  Swear.

Time for Glasses
Yep, it’s that time.  The last time Nick went to the eye doctor, she warned that he’d be needing glasses soon, and we crossed that magic threshhold on his last visit this weekend.  Just for mostly school work, things that are at arm’s length.  I can’t say he’s really warmed to the idea yet, but is slowly starting to embrace it.  And anything that reduces his squinting and the extra work he’s putting his eyes through is well worth its weight in gold.  Or at the very least, $108.00.

No Bake Cookies
Recipe courtesy of All Recipes

Ingredients

1 3/4 cups white sugar
1/2 cup milk
1/2 cup butter
4 tablespoons unsweetened cocoa powder
1/2 cup crunchy peanut butter
3 cups quick-cooking oats
1 teaspoon vanilla extract

In a medium saucepan, combine sugar, milk, butter, and cocoa. Bring to a boil, and cook for 1 1/2 minutes. Remove from heat, and stir in peanut butter, oats, and vanilla. Drop by teaspoonfuls onto wax paper. Let cool until hardened.

I love no bake cookies! Very hard to resist when you make them though!

I love Nick’s glasses! I’m sure he’ll get used to them soon enough!
