Recipe: Hanger Steak with Olive Oil and Herbs

May 1, 2005 · Narrative

We had a great, great meal tonight … not bad considering both dishes were brand new recipes. I made Hanger Steak with Olive Oil and Herbs with a side of roasted new potatoes and Mediterranean Couscous Salad. The Steak was truly excellent … flavorful, and very tender. I’ve never made hanger/skirt steak before, but will definitely be using this cut a lot more in the future. And for my vegetarian readers, the salad was easy to make and delicious. The Husband had went back 2 times for salad refills! He’s a big time salad eater, which is a good thing since he detests all green vegetables.

Tomorrow is Brunch at my sister and brother-in-law’s to celebrate my brother-in-law’s birthday, albeit a bit belatedly. My sister is keeping the menu a secret, but this is the first time she’s cooked for us, so I’m really looking forward to it.

Just got back from our weekly trip to the bookstore (although this week we actually went 3 times!!) and came back with a few more cooking magazines. Although I subscribe to 65+ magazines, I’m going to have to break down and subscribe to a few more to save $$ buying them monthly. I picked up the new issue of Chocolatier Magazine. Did you know that it was affiliated with Godiva? I didn’t find that out until a few months ago when I was searching for a recipe. I’ve made Chocolate Marquise from Chocolatier, and it was so good. Simple and decadent, a perfect combination. Looks like some other great winners to be discovered in the new issue.

I also picked up the new issue of Cuisine at Home and delicious. Cuisine at Home’s cover is boasting some great looking wraps, and delicious. has a yummy looking cheesecake from Jamie Oliver, along with 60 “must-have recipes.” My kinda issue!

And in the “We All Need a Little More Temptation” department, Pillsbury has teamed up with Kemps to launch seven new flavors of premium ice cream. With flavors from Turtle Fudge Brownie to Chocolate Chip Cookie Dough, it won’t be hard to find a new favorite. You can get more information here.

And lastly, since it’s the end of the month, I have my official count for New Recipes Tried. This month, I tried 32 new recipes – not too shabby, if I do say so myself.

Until tomorrow…

Hanger Steak with Olive Oil and Herbs
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
2 tablespoons maple syrup
One 1-pound hanger/skirt steak
Salt and freshly ground black pepper
10 oz. small potatoes, quartered
5 tablespoons extra virgin olive oil
1/2 cup coarsely chopped herbs

Combine Worcestershire sauce, soy sauce and maple syrup. Coat steak with the mixture. Season with salt and pepper. Let marinate 2 hours at room temperature. About an hour before serving, heat oven to 375. Coat potatoes with 2 tablespoons olive oil, salt and pepper and roast crisp. Keep warm. Heat grill. Grill steaks. Set aside. Warm remaining olive oil in a small skillet, add herbs and cook about 30 seconds, until herbs are fragrant. Pour herbs and oil over potatoes and steaks. Serve. Serves 2.

Mediterranean Couscous Salad
8 oz couscous
14 fl oz vegetable stock
1/2 lb. grape tomatoes, cut in half
2 medium avocados, peeled, stoned and cut into large chunks
4 oz black olives
8 oz feta cheese, roughly crumbled
mixed salad green leaves

For the dressing:
5 tablespoons olive oil
2 tablespoons lemon juice

Tip the couscous into a large bowl, stir in the hot vegetable stock, cover and leave to soak for 5 minutes. Make a dressing with the olive oil, lemon juice, salt and pepper. Stir 2 tablespoons into the couscous, then gently mix in the tomatoes, avocados, olives and feta. Taste for seasoning. Toss salad leaves with the remaining dressing, divide the salad between four plates and spoon toe couscous over the top.

Are you serious??? 65 cooking mags?

Wow…I thought I was indulgent with my four, wait…with Martha Stewart Living, that brings me to five…

Chocolatier has been on my wish list for some time. But I didn’t know there even were that many!

Oh no – they’re not ALL cooking magazines. Probably about 20 of them are. The rest are decorating, home improvement, entertainment, etc. :) There are some great places online (go to http://www.magazinepricesearch.com) where you can get rock-bottom prices for subscriptions (i.e., $4.95/year!), so it’s not quite as costly as it would seem. ;)

    Ok…I’m a little less blown-away now.

Thanks for the tip; I’ll check that site out tonight!

How do you have time to read them all? And how do you dispose of them? Mine pile up so fast that I am afraid to subscribe to more than a couple.

My old library had a used magazine rack where you could buy mags for about 20% of the cover price. It was a benefit for the library and I donated all my old mags to them. It was great because it cleared my house of clutter and I found magazines I could try, cheap.

I’d love to make the Hangar Steak recipe, but do not own a grill. Any suggestions on other ways to prepare this meal? Thanks!

Erika – do you have a grill pan? If so, it works very well with that. I used a grill pan the first time I made it. If you don’t have that, you can also broil it, just watch it because it’s a thinner cut, so cooks quickly.

Thanks for the suggestions! I will have to do the broil method, as this graduate student doesn’t own a grill pan either! :-(
