Hey all! Another Tuesday, which means ARF/5-A-Day is upon us, and I have quite the round-up in store for you. Before I get to it, first my own contributions.
Our main course tonight was a tried-and-true, John Zaccaro’s Penne with Vodka Sauce. This is one of my favorite penne with vodka sauce recipes. It’s very easy to make, and the sauce is nice and thick, without being overly heavy. It comes from Karen Duffy’s A Slob in the Kitchen. Good cookbook, good food, good sense of humor.
Going backwards, to start our meal, I made a new recipe, Salad Ole. Very quick to make, and chock full of veggie goodness. I really liked the dressing on this one, and will probably make it again. Not a WOW, but a good, solid salad.
Lastly, Nicholas put in a request for another batch of Strawberry Bread and, of course, I’m all too happy to make it. It’s fairly healthy, and bursting with strawberries. The batch I made on Sunday for my office and The Neighbors’ office was obliterated … poor Nicholas was waiting for leftovers. ;) Not with these guys, so now he’s got his very own and he’s a happy camper. Doesn’t this before shot look delicious? Reminds me a bit of granola.

Salad Ole
2 cups tomatoes, seeded and chopped
1 cup diced zucchini
1 cup frozen corn kernels
1/3 cup chopped green onions
2 avocados – peeled, pitted and diced
1/3 cup picante sauce
2 tablespoons vegetable oil
2 tablespoons lemon juice
1/2 teaspoon garlic salt
1/4 teaspoon ground cumin
handful of chopped fresh cilantro
In a large bowl, combine the tomatoes, zucchini, corn, green onions, and avocado.
Whisk together the picante sauce, oil, lemon juice, garlic salt, cilantro and cumin. Toss gently with the vegetables. Chill 3-4 hours, and toss before serving.
I love vodka sauce and your salad looks so crisp and fresh… I’m itching for corn season… Everyone’s dishes look delicious!
Penne with vodka sauce and the strawberry bread will definitely try those recipes :-) yum yum yum !!
