Revisiting an Old Classic: No Peek Casserole

The Neighbors and my stepdaughter were over for dinner tonight. I debated about getting take-out, but a craving for comfort food and an old classic took hold instead. I originally found this recipe, No Peek Casserole, on a coupon message board, of all places. They have a cooking section, and it was posted by a caterer.

It couldn’t be simpler to make … brown ground beef, mix a few things together and bake for 2-1/2 hours. The hardest part is just planning ahead so you have enough baking time, particularly if you do this during the week. But I guarantee, it is so worth it. After baking so long in the oven, the beef mixture is soft and melty smooth and oh so good. I serve it over egg noodles and it’s a hit every time. Enjoy!

A year ago today… revisiting a popular cookbook.
Two years ago today… mmm, I remember this soup recipe. Definitely time to make it again!

the recipe looks like pure comfort. I’m wondering how it would do in the crockpot? Pre-cooked meat, mixture crocked a few hours on LO?

I’ve never seen something like this! My mom was a big fan of the casseroles when we were little, but it was more like chicken and rice casseroles or something all encompassing. This sounds so simple, too, I’ll have to try it.

Jan – I don’t see why it wouldn’t work … maybe 3 hours or so on low? If you make it, be sure to report back. :)

Kelly – funny how thoughts of casseroles always flow back to memories of our moms, isn’t it? I think trends like that go in cycles – time to bring it back. :)

I’m not a big casserole fan as I grew up on hamburger helper and was forced to eat it as a child. I will say that it was quite tasty. None of us who are old enough to remember can forget that jingle “hamburger helper,helps your hamburger”. It’s a little chilly this morning and I am thinking of some soup for toinght. Any good recipe’s to share?
