Awesome Bacon-Tomato Dip

blt-dip-small.jpgI printed out this recipe from Recipe Zaar some two years ago. Every time I’m looking for a recipe to make, this one ends up on the top of the pile, but somehow gets passed over … time and time again. Until now. I finally had a chance to make Awesome Bacon-Tomato Dip. I mean, really, how long can you ignore something with bacon in it, right? Bacon makes everything better.

I won’t lie. When it comes to dip, although I’ve made a bunch of them, a strong contender in my Top 10 is the simple Lipton Onion Soup Mix variety. C’mon, you know I’m right.  Maybe it’s because I remember my Mom making it growing up. Maybe because it’s so easy. Maybe just because. That being said, I’ve come across a number of homemade dip recipes that I just adore… it’s the salty side of me … and this one is no exception. 

It went perfectly with a platter of crispy bagel chips, and everyone dug in immediately. When The Neighbor Husband tried it for the first time, it got an enthusiastic two-thumbs up, with him going on to note that “it is great, but I think it could use a bit more bacon.” I told him that in actuality, the recipe called for a pound of bacon, and I had only used half of it. “Cate!” came the quick admonishment. I know. I know. Cut back on the bacon? Perish the thought. But hey, if it tastes just as good, and doesn’t sacrifice the taste, why not, right? And it lessens the guilt factor just a tad.

So go on, give it a whirl, whether with half a pound of bacon or the full monty. I guarantee you’ll be coming back for more.  And with a homemade recipe this easy, why would you eat another?

Awesome Bacon-Tomato Dip

1 cup sour cream
1/2 cup mayonnaise (I use light)
4 ounces cream cheese, room temperature (I use 1/3 less fat)
1/2 cup shredded cheddar cheese (go for the sharp kind!)
1/4 cup chopped onion
1/4 cup diced green pepper
1 large tomato, seeded and diced
1 lb bacon, cooked crisp, cooled and drained (I used half a pound)
1/2 teaspoon garlic powder
black pepper, to taste
shredded lettuce (to garnish) (optional) (I skipped)

In medium bowl, with mixer, blend sour cream, mayonnaise, cream cheese, cheddar cheese, chopped onion and green pepper, garlic powder, and black pepper. Crumble bacon into small pieces and add to mixture. Add chopped tomato and stir well. Garnish with shredded lettuce just before serving, if desired. Serve with Townhouse crackers or Wheat Thins. Also good served in a bread bowl with bread cubes to dip.

Hi Cate,

OMG this looks and sounds awesome. i can just imagine eating it. I did however pull up the nutritional facts on it and WOW – good going down but not too healthy for ya.
PS – my coworkers love this site. we are always pulling up recipes to try. well at least they are making them and bringing me a sample. :)

Cate! Less bacon?! This sounds like a good one to try Memorial Day weekend.

I could eat the Lipton Onion soup dip all by myself. I love it that much.

I just had a commercially made tomato bacon dip that was decent and I thought I could make better at home, I’ll have to give yours a go!

Chris – hey, long time, no talk! Did you pull up the stats with half the bacon and the low-fat mayo and reduced fat cream cheese? That had to make a significant difference, no? Thanks for turning your co-workers on to Sweetnicks! ;)

Maria – I promise it tastes just as good with half the bacon. I wouldn’t steer you wrong. :0)
