Baked Apples

Baked ApplesGrowing up, I can vividly remember two desserts that my Mom made frequently … Baked Apples and Creme Caramel.  Although I loved Baked Apples then, I have never made them on my own before.  Silly when you consider how simple it is, right?  But with the mountain of apples we have from recent trips to the orchards, it was time.  It’s a perfect dessert when you’re looking for something to pull together quickly, and a great way to celebrate Fall.  And even better, when it’s economical enough to make it into our $7 Dinner Challenges

4 apples
1 cup brown sugar
3/4 cup water
1/2 cup walnuts
1/2 cup raisins

Preheat oven to 400F.   Cut a thin slice off the bottom of the apples so they sit flat.  Using a paring knife, core the apples and remove the outer skin from about the first half-inch of the apple from the top down.  Place the apples in a 8- or 9-inch baking dish and fill the cavities with the walnuts and raisins, allowing extra to spill over into baking dish.

In a medium saucepan, add the water and brown sugar and stir to combine.  Heat on medium-high heat for a few minutes, giving the mixture a chance to cook down a bit and turn thicker and slightly syrupy.  Pour into apples, letting it spill over into bottom of baking dish.  Bake for 40 minutes.  Delicious when served with vanilla ice cream.

I remember my mom making baked apples when we were kids (I’m sure the Brother doesn’t remember), but I don’t have her recipe. I loved them then and sure I will love them now :)

These look great! i have a few leftover apples after butternut squash and apple soup and 2 batches of applesauce! I love the way apples taste warm with brown sugar…and you’re right ice cream would be amazing on this.
