We went to our church’s St. Patrick’s Day dinner this weekend, and, man, you’d be surprised just how much green people can actually combine to make one outfit. And how many different styles of green shoes can actually be purchased these days. Forget the food, it made for fantastic people watching! Although we got a corned beef and potatoes fix there, that still didn’t stop us from having our full-on Irish-American feast tonight too.
This year (unlike last!), I had all my bases covered. I had a pin and a string of green metallic beads for Nick to wear to school, I visited his school at lunchtime to bring his class green cupcakes (doing my Class Mom duties), and planned our dinner for tonight.
As for dinner, sticking to tried-and-true favorites, I made this recipe for Corned Beef, Cabbage and Vegetables that I’ve used for a few years now. It’s crazy simple to make and the corned beef is nice and tender, just the way it should be. I hate how much corned beef shrinks when it cooks though. It always looks like so much meat, and before you know it, it’s nearly gone. We shared some of ours with a neighbor who was home alone tonight with his son, and by the time dinner was done, so was the corned beef. I think I may make another one (sans vegetables) just to get our Irish fix for the week before it becomes scarce again.
For a second side, I, again, stuck with another tried-and-true, Diane’s Colcannon. Crispy bacon, melted butter, sauteed onions and warm mashed potatoes… it doesn’t get much better than that, and it’s become a favorite standard at our St. Patrick’s Day table. Ok, maybe not an across-the-table favorite since Nick wouldn’t touch it, and The Husband has a very small portion, but I like it enough for all of them.
I had planned to make brown bread too, since it’s become a tradition and Nick can practically eat half a loaf himself, but by dinner time, we had an extra kid and a visit from Roto Rooter, so something had to give. Tomorrow, brown bread!

I had leftover pork with broccoli and asparagus…ate my green but no cabbage, finished that yesterday!
