With our penchant for the occasional six-layer Rainbow Cake and fun Fourth of July cupcakes, it was only a matter of time before Rainbow Pancakes found their way into our kitchen. I saw them on Ohdeedoh (love that site!) by way of Amanda from I Am Mommy last month and made a mental note to make them. This past weekend, Nick had a sleepover and I thought it would be a perfect morning-after breakfast.
I didn’t tell the kids what I was doing, and as soon as they saw the pancakes, they were high-fiving each other and yelling “awesome!” Madeline took one look at them and said “party!” I don’t think I’ve heard her say the word party before, but love that she associated these with party. Happy pancakes.
Very simple to make and not time consuming at all. Maybe 20 minutes start to finish. With one batch of basic pancake batter, I was able to get three sets of rainbow pancakes made. Once you have your regular go-to pancake batter made, divide it into six little bowls. I don’t use regular food coloring. Like the Rainbow Cake, I use the coloring gel instead. A little goes a long way and you get more vibrant colors. You can get it from your local arts and crafts store (use those 40% off coupons that come out in Sunday’s paper). One little drop of food coloring in each bowl and away you go.
I got three pancakes made from each color. One suggestion, make the pancakes in the order of the colors of the rainbow, so when you’re stacking them, you’re doing them in order, without having random colored pancakes sitting on the counter while you wait to build the rainbow. Speaking of order, the table discussion during breakfast was that I had the order wrong. The kids swore it was green, blue, purple. I swore it was blue, green, purple. Leave it to me to debate with a couple of seven-year-olds. Turns out they were right. Now to reprogram my 39-year-old mind. If you do three pancakes from each color bowl, they will be smaller in size, so while the kids are eating six pancakes, they’re really more like three regular size pancakes.
I miss the days of sleepovers. I can relive my youth vicariously through the kids now. Staying up all night. Giggling until the wee hours of the morning. Gossiping. Dares. Nick and his friend were up until 2 am before I forced the sleep. Hey, I need sleep too! But until then, they talked non-stop about anything and everything. Sleeping on the floor. Watching a movie. Munching on popcorn and drinking apple juice. Good times. Nothing but good times.

My niece/goddaughter Sadie at the park over the weekend. Just over nine months old, she now outweighs Madeline. Gorgeous blue eyes, this little heartbreaker is now clapping and waving and making all kinds of sing-song noises and slowly making herself heard. She stood up for the first time while we were at the park, and then proceeded to trump that by trying to clap at the same time. She’s a very Zen baby, quiet, sitting back, taking it all in. Madeline was like that for the first year. Then all heck broke loose. Last week she rightfully earned the nickname Naughty Monkey. Here’s hoping Sadie’s Zen qualities last a bit longer. One Naughty Monkey is enough. For now.

ROY G. BIV – that’s how I always remember the colors of the rainbow in order. But I figured that one out in high school so your kids are way ahead of the game.

I have a cat that I call Monkey. He earned it by the way he bounces all over the furniture.
Love it! My daughter isn’t really old enough to appreciate rainbow pancakes as anything other than just YUM pancakes, but I may have to make these for my husband to surprise him.
You are going to be the favorite house to sleepover at with those pancakes! My mom always made blueberry muffins instead of picking up donuts… made my house the favorite place to sleepover growing up!

What a fabulous find! I just happen to stumble on these before Easter giving us the perfect colorful breakfast which my five year old daughter enjoyed very much!
These are amazing! I made them, but tried to substitute more ‘natural’ food colourings, sadly though, they didn’t turn out as vibrant as yours. I used a homemade concentrated beetroot colouring for the red. I also used a homemade colouring made from nettles for the green, which looked really cool and didnit effect the flavour. I was a bit stumped as for what to do for the other colours, so I just ended up with reds and greens! Do you have any ideas for natural food colourings?
