To say that I have a ton of things to share with you from this weekend would be an understatement.
But first, we need to talk about trail mix.
Mostly because I have, gulp, some 800 pictures to sift through from this weekend. And because I have a deadline to share this new recipe.
Fiber One recently approached me (and a few other bloggers) to create new recipes using their cereals as a mix-in. They encouraged us to think outside the box. Both literally and figuratively. What else could we make with their cereal instead of the usual “add milk” routine?
And the first idea I pitched was for a snack mix. Because when the kids and I are rushing off to a soccer or track practice, which will run straight through dinner time, we grab a snack to munch along the way, and go. And a lot of those times, it is cereal in a sandwich bag. Not messy, pretty easy to eat, and not terrible for you.
Well, assuming you choose the right kind of cereal. Wink, wink, nudge, nudge.
But why stop at just a handful of dry cereal? Knowing how much the kids like trail mix and Chex Mix, I decided to play around with some other flavors, using Fiber One cereal as the main ingredient.
Throw all the ingredients in a bowl, stir to combine, and then portion it out into little separate containers, and you have the perfect grab-and-go snack for a busy day. Sweetness from the M&Ms and the flavored nuts, chewiness from the raisins, saltiness from the pretzels, and a nice crunch from the Fiber One cereal.
I can’t think of a better way to think outside the box when it comes to using cereal as an ingredient.

Sweet ‘n Salty Trail Mix

1 cup Fiber One Nutty Clusters & Almonds
1/2 cup cocktail peanuts
1/2 cup glazed walnuts
1 cup Sweet and Salty M&M Snack Mix (contains pretzels, raisins, M&Ms, nuts, and more)
Measure out your ingredients into a large Ziploc bag or storage container. Shake gently to combine. Portion out your mix into small, individual bags or containers for an easy grab-and-go snack. Try adding dried cranberries to give your mix a little extra tang in every bite.
