It didn’t take much to get me to @mikespastasand It didn’t take much to get me to @mikespastasandwichshoppe when a friend texted me a screenshot of their cheese butter. Up until last week I had never even heard of cheese butter but just two days later, I’m driving an hour round trip to get some. 😂 I was never one to succumb to peer pressure (I didn’t have my first drink until I was 21!), but when it comes to food finds, I am very easily intrigued. After all, that’s how I’ve discovered some of my favorite bites over the years … lardo from @butlerandtheboard, a spicy Italian sausage, and my love of chicharron. If you haven’t visited Mike’s in Nutley, it’s worth a visit. While there, I also got a small tray of meatballs (a bargain at $10!) and a delicious mortadella sandwich that is worth a round trip. ✨
The long, dreary and grey months of the Winter nee The long, dreary and grey months of the Winter need a little bit of color, so here you go. 😍 Love this chest of drawers. Discovered it buried in a local shop and bought it specifically for the green color (one of my favorites). Vintage Coke crate was a $10 score from a garage sale place on Facebook some ten years ago. And the assorted markers in Roy G Biv order (natch) that aren’t used anymore because my kids have sadly left that phase. 🙃

A friend was taking a trip to Ireland and asked if A friend was taking a trip to Ireland and asked if I wanted her to bring me back anything. Would you believe me if I told you I asked for salt? I love picking up different varieties, whether we’re traveling or I’m just visiting a new shop. Maddie grabbed me a super cute one from her trip to Paris last year, and the Magic Unicorn Salt I get locally is another favorite. What’s yours?
One of us hops like a bunny down the steps, has a One of us hops like a bunny down the steps, has a serious case of FOMO on the daily, gets hiccups more than anyone we know and has perpetual bed head. She’s quite the unique roommate but may be exactly what our home needed. 💛
I haven’t had a bagel in ages, but when I saw th I haven’t had a bagel in ages, but when I saw that @njdotcom had picked six bagel shops at the “best in the state,” and one was reasonably local, all the sudden I needed one. I was never one to fall prey to peer pressure, but I’m very definitely a marketer’s dream. 😂 Alfa Bagels is on Route 10 in Randolph and has a good assortment of bagels, including all the usual suspects, but with a few others like rainbow, Asiago and French Toast throw in for good measure. Their bagels always seem to have a nice chew, which I appreciate and I love their sesame one. My go-to order lately is a double toasted flagel with lox spread and tomato. Their lox spread is a little ho hum, but the bagel is delish. Check them out next time you’ve got a craving (or get motivated by a local news story 😝). What’s your bagel order?

Recipe: Fudgy Brownies {Day 3 and 4 of Teacher Appreciation Week}

Easy Fudgy Brownies-001
Every morning this week, the kids have come downstairs and looked on the kitchen counter to see what was going to be sent in for their teachers and Teacher Appreciation Week.  I didn’t set out to send something in every day of this week, but it’s kind of worked out that way.  Once I got to Wednesday, I felt like I needed to do it the rest of the week, you know?

I had torn out a recipe from Woman’s Day magazine for chick pea burgers, and as I was going through the ingredient list to see if I had everything, I spied a small mention for Fudgy Brownies in the corner of the page.

If you’ve been a Sweetnicks reader for awhile, you know that we’re always on the look-out for a solid fudgy brownie recipe.  You know, the one that stops the search.  A quick scan of THAT ingredient list, and I actually had everything on hand.  In fact, I bet you might too.  Well, the bakers among you will.

Nick had a friend over and Madeline was busy “cleaning” her room.  Which basically means she finds a favorite toy or stuffed animal and takes a trip down memory lane.  And completely forgets that she was asked to find a path to her bed clean.  She usually surfaces an hour later, her room a bigger disaster than it was when she first started.  And that’s when we close the door and pretend it doesn’t exist.  At least until we see it again at bedtime.

When it comes to keeping her room neat, I’m having flashbacks to my teen self’s room.  It’s not pretty.  And my mom is saying something about I told you so.

So with three kids in the house, all magically entertaining themselves, and dinner already taken care of, I decided to make a quick batch of the brownies.

It took all of about 15 minutes before the batter was going into the oven.

The recipe said 18 minutes for baking.  And they were a bit off.  Well, at least by the O’Malley oven standards.  I think it ended up being an extra 10 or so minutes, so beware.

Even after that, they were still a bit too fudgy, but I didn’t want to bake them longer, for fear of overcooking them.  I ended up sticking them in the fridge for a bit, and that did the trick.

Later on.  Ok, before dinner.  I cut off a corner to give them a try.  You know, quality control and all that.  I can’t very well send a new recipe in to three teachers without having tried them myself first, right?

F-u-d-g-y to the nth degree.  Just the way we like them.

And hours later, they were bagged up and gone.

My biggest complaint about the recipe?  That it is for an 8×8 pan, so it doesn’t make a ton.

In a round-about way, that’s likely a good thing.

But Nick loves brownies, and he didn’t get to try these before they were gone, so we’ll be baking more up again tonight.  You know, to appease that healthy dose of Mom guilt I served myself.

If you need a quick sweet treat for your after-schoolers, or to finish up celebrating Teacher Appreciation Week, or if you just finished Day 10 of rain-wet-gloom-rinse-repeat with the rest of us, bake these.

When I had my first bite, it reminded me of Nick’s request last year for Hot Fudge Brownie Sundaes as part of his birthday dinner.  These are totally perfect for that.  And, of course, countless other non-birthday, just because moments.

Fudgy Brownies

Do you happen to watch Rachel Zoe’s reality show on Bravo Network? She’s a celebrity stylist, and when she sees something that she is absolutely in love with and can’t live without, she says, “I die.” Slowly. With great emphasis. Like that thing, whatever it is she’s seen, has made her die and go to heaven. These fudgy brownies? I die.

When it comes to brownies, as with a lot of other food items, everyone has their own strict criteria for what makes it “the one,” the perfect stop-your-search, call-off-the-dogs version. For me, with brownies, I want them fudgy. The fudgier the better. Those are Nick‘s favorite kind too. You can have your cakey brownies. They just don’t do it for us.  Madeline, my girl with the crazy sweet tooth, will eat any kind, thankyouverymuch.

I found this recipe on The Modern Apron’s blog (original post here), and she got it from an LA Times write-up, and it’s actually a recipe from a restaurant that serves it as part of a Brownie Hot Fudge Sundae.  And that may just be the excuse to make another batch of these babies.  To serve in a Brownie Hot Fudge Sundae.  Hmmm… Moist, fudgy, delicious, rich but not too rich, this recipe serves up everything a brownie should be and then some.  What’s more, you probably have all the ingredients in your cupboard right now … the next time you’re craving something sweet, go for these.  You won’t be disappointed….
