I have plenty of reusable shopping bags since New I have plenty of reusable shopping bags since New Jersey banned the plastic ones last year. But when I spied this beauty for a buck, how could I resist? It just is so darn happy, which makes me happy. The little things aren’t so little. 💛

I’ve been on a smoked salmon kick lately (it’s I’ve been on a smoked salmon kick lately (it’s so good for you), so when I saw that a local patisserie has a smoked salmon croissant available (weekends only), I added it to my list of things to seek out. I popped into @chocolatinenj early on Mother’s Day and was rewarded with this deliciousness. Layers of soft flaky croissant dough, tender smoked salmon, light whipped cream, thinly sliced red and green onion slivers and dotted with capers… it was every bit as amazing as you’d imagine it would be. If you’re local, don’t sleep on this one. 😋

1/ hit up a few yard sales and snagged this beautiful pasta dish from Italy with my favorite color for a buck, 2/ and one of these printer trays came home with me too, 3/ pre Mother’s Day celebrations with 30 local moms, 4/ finished the weekend supervising furniture assembly
Today would have been my friend Cathy’s 53rd bir Today would have been my friend Cathy’s 53rd birthday. Unfortunately she’s not here to celebrate because she died suddenly at age 49. I think of her often … every Mother’s Day because we spent most of them together since her husband worked weekends … when I discover a new food adventure (we once did a day long donut crawl) … when I’m sharing a special time with my kids knowing that her then-11 year old is growing up without her. Before she passed, I always appreciated every day, but since then, even more so. You never know what the next day can bring, so relish in the sunshine, surprise rainstorms, making wishes over railroad tracks and all the wonderful randomness life can throw your way. Don’t waste a single second, say yes, live on the outskirts of your comfort zone, laugh often, tell people you love them, give eight second hugs, and squeeze every ounce of joy you can out of life. Do it for the people who can’t. ✨

Monday Kick-Off

No dinner report tonight as I decided to give the refrigerator a good cleaning and go through everything that’s in there. Yesterday after an unsuccessful 10-minute search for the mayonnaise, I knew it was time to do a overhaul… so it was just leftovers tonight.

Anyone catch last nights’ episode of The Next Food Network Star? Down to the final four, it’s definitely getting interesting. Up until last night, I wasn’t really interested in Carissa. She just reminded me of a car destined for an accident, kind of all over the place at once. Last night, though, she seemed to really pull it together, and after her field piece and subsequent show pitch, I was actually forming a different opinion of her. I was sorry to see Andy go, but I think my money is on either Guy or Carissa at this point. Who’s your pick?

Hell’s Kitchen and Gordon Ramsay fans will be happy to know that his show is coming back for a second season, premiering on June 12. I’m looking forward to it. I wish they had done a follow-up on season ones’ contestants and final winner, Michael. I’d love to see what they’re all doing now.

For Treats to the Office Monday, I made a batch of Peanut Butter Fudge, using a recipe that Jaay from Culinarily Obsessed recommended. Finally, the recipe to end my search for the “perfect” Peanut Butter Fudge. Not having too much of a sweet tooth, Peanut Butter is actually the only flavor fudge my sister and I liked growing up, so I’m excited about this one. Very easy to make, delicious and better yet, no need for a candy thermometer! Nicholas helped me make it last night, lending his fingers to licking the batter bowl clean. “Mama, you’re a good cooker!” he exclaimed when he was done. My work here is done. ;)

A year ago today … Malibu Diner, Mitsuwa and Chocolate Decadence.

Easiest Peanut Butter Fudge
1/2 cup butter
2 1/4 cups brown sugar
1/2 cup milk
3/4 cup peanut butter
1 teaspoon vanilla extract
3 1/2 cups confectioners’ sugar

In medium saucepan, melt butter over medium heat. Stir in brown sugar and milk. Bring mixture to a boil and boil for 2 minutes. Remove from heat and stir in peanut butter and vanilla. Pour over confectioners sugar in a large mixing bowl. Beat until smooth; pour into an 8×8 inch dish lined with tinfoil and buttered. Chill until firm and cut into squares.

    Mebeth, Guy has definitely been consistent since the beginning. Did some browsing last night and found his recipe for Waka Waka Salad and Rhode Island Calamari – can’t wait to make them.

    Ive actually never made fudge before because I dont really like it (coincidentally, I like peanut butter fudge though!). I was suprised that there arent any chocolate ingredients in it, like morsels or cocoa powder.I guess I always assumed fudge was choclate based.

    I think I am placing my money on Guy or Reggie. I have to watch this past Sunday’s episode again this week to really get into it as we had company and the hubby thinks I am rude to want to watch the show while they are there…
