I’ve been on a smoked salmon kick lately (it’s I’ve been on a smoked salmon kick lately (it’s so good for you), so when I saw that a local patisserie has a smoked salmon croissant available (weekends only), I added it to my list of things to seek out. I popped into @chocolatinenj early on Mother’s Day and was rewarded with this deliciousness. Layers of soft flaky croissant dough, tender smoked salmon, light whipped cream, thinly sliced red and green onion slivers and dotted with capers… it was every bit as amazing as you’d imagine it would be. If you’re local, don’t sleep on this one. 😋

1/ hit up a few yard sales and snagged this beautiful pasta dish from Italy with my favorite color for a buck, 2/ and one of these printer trays came home with me too, 3/ pre Mother’s Day celebrations with 30 local moms, 4/ finished the weekend supervising furniture assembly
Today would have been my friend Cathy’s 53rd bir Today would have been my friend Cathy’s 53rd birthday. Unfortunately she’s not here to celebrate because she died suddenly at age 49. I think of her often … every Mother’s Day because we spent most of them together since her husband worked weekends … when I discover a new food adventure (we once did a day long donut crawl) … when I’m sharing a special time with my kids knowing that her then-11 year old is growing up without her. Before she passed, I always appreciated every day, but since then, even more so. You never know what the next day can bring, so relish in the sunshine, surprise rainstorms, making wishes over railroad tracks and all the wonderful randomness life can throw your way. Don’t waste a single second, say yes, live on the outskirts of your comfort zone, laugh often, tell people you love them, give eight second hugs, and squeeze every ounce of joy you can out of life. Do it for the people who can’t. ✨

New (to Me) Blogger on the Block Thursday #22

I had the day off today and needed to make dinner for a client, so I started the morning cooking. For a starter, I stuck with a tried-and-true, making Michael Chiarello’s Salami Salad with Tomatoes and Mozzarella. When deciding what to make for the main course, I pulled a untried recipe from my files as part of my Rediscovering My Library segment for this week. I went with Ravioli Lasagna, a recipe from a Woman’s Day magazine clipping from a few years ago. It was a simple, casual dish to make and very easily doubled, so I got dinner for us out of the way too. Baking the finished product for an hour really makes the ravioli deliciously tender. Dessert was a simple batch of fudgy brownies.

Today’s nod for New (to Me) Blogger on the Block goes to What We’re Eating. A California-based site, each post features a lighthearted, conversational banter between Tyler and Amanda, and a rating system for the recipes they make. Featuring dishes like Lemon Thyme Encrusted Pork Tenderloin with Roasted Vegetable Salad, Buttermilk Bleu Cheese and Cauliflower Soup with Thyme Croutons (the picture which seriously makes my mouth water!), Garam Masala Chicken with Green Chutney and Bread Pudding with Whiskey Sauce, you’re sure to find something to set your palate ablaze here.

Salami Salad with Tomatoes and Mozzarella
Recipe courtesy Michael Chiarello
Prep Time: 15 minutes
Yield: 8 to 10 servings

1 pound salami, cut into 1/4-inch pieces
6 tomatoes, diced
1/2 cup fresh basil leaves
1/2 pound mozzarella, cut into 1/2-inch pieces
Salt and freshly ground black pepper
Olive oil, for drizzling
Vinegar, for drizzling

In a large bowl, combine salami, tomatoes, basil, and mozzarella. Season, to taste, with salt and pepper. Drizzle with olive oil and vinegar and toss well.

    That salad sounds great – where did you find decent tomatoes this time of year?

    And where’s the recipe for the ravioli lasagna? That’s something I’d like to try.

    Hello, Cate! Thanks for the kind words. :) I was wondering, how did you make the brownies? Amanda and I have this ongoing debate about what is better: box brownies or made-from-scratch brownies. Personally I think box brownies are pretty good, but I havent had a lot of made-from-scratch brownies.

    WhiteTrash – guess we’ve been lucky with tomatoes so far. :) Ravioli recipe tomorrow, I promise. And yup, finally feeling better – thanks for asking!

    Tyler – shhhh, doctored box mix. Don’t go that route too often, but trying to reorganize my pantry. When going the box route, try Ghiradelli’s – excellent and very fudgy! Homemade? Try my Dulce de Leche Brownies, one of our favorites.
