I remarked how pretty that tiny sliver of the moon I remarked how pretty that tiny sliver of the moon was on the way home tonight, and my friend pulled over right away so I could grab a photo. That’s when someone really knows you! It was just too beautiful to resist. 🌙

Context: 1/ picture perfect weekend, 2/ threw together a quick meal w udon noodles, steak and broccoli, so good, 3/ the sun reflections on this painting struck me today, looked like a cross 4/ it takes all afternoon but nothing like Sunday Gravy, 5/ six months old, 6/ when he wants some serious zzzz’s, he covers his eye with his ears, the cutest, 7/ breakfast pastries at @coniglios
I have plenty of reusable shopping bags since New I have plenty of reusable shopping bags since New Jersey banned the plastic ones last year. But when I spied this beauty for a buck, how could I resist? It just is so darn happy, which makes me happy. The little things aren’t so little. 💛

I’ve been on a smoked salmon kick lately (it’s I’ve been on a smoked salmon kick lately (it’s so good for you), so when I saw that a local patisserie has a smoked salmon croissant available (weekends only), I added it to my list of things to seek out. I popped into @chocolatinenj early on Mother’s Day and was rewarded with this deliciousness. Layers of soft flaky croissant dough, tender smoked salmon, light whipped cream, thinly sliced red and green onion slivers and dotted with capers… it was every bit as amazing as you’d imagine it would be. If you’re local, don’t sleep on this one. 😋

1/ hit up a few yard sales and snagged this beautiful pasta dish from Italy with my favorite color for a buck, 2/ and one of these printer trays came home with me too, 3/ pre Mother’s Day celebrations with 30 local moms, 4/ finished the weekend supervising furniture assembly
Today would have been my friend Cathy’s 53rd bir Today would have been my friend Cathy’s 53rd birthday. Unfortunately she’s not here to celebrate because she died suddenly at age 49. I think of her often … every Mother’s Day because we spent most of them together since her husband worked weekends … when I discover a new food adventure (we once did a day long donut crawl) … when I’m sharing a special time with my kids knowing that her then-11 year old is growing up without her. Before she passed, I always appreciated every day, but since then, even more so. You never know what the next day can bring, so relish in the sunshine, surprise rainstorms, making wishes over railroad tracks and all the wonderful randomness life can throw your way. Don’t waste a single second, say yes, live on the outskirts of your comfort zone, laugh often, tell people you love them, give eight second hugs, and squeeze every ounce of joy you can out of life. Do it for the people who can’t. ✨

Help Out The Neighbor Husband

OK folks, you might have seen his plea for help in the comments section yesterday … help out the fella. Show The Neighbor Husband alternatives to Sandra Lee. He’d be forever grateful, and so would we!

Here’s the skinny: The past couple weekends that we’ve gotten together for our dinner with The Neighbors, we’ve done a soup and sandwich thing with munchies, keeping it easy. The Neighbor Husband has been taking over the sandwich portion of the meal and wants suggestions. I know you guys can help him – let’s show him just how much. Have a favorite recipe you’d like to share? Have something that will leave him (and us) hungry for more? This is your big opportunity to show him ways beyond good ‘ol Sandra Lee, but in her immortal words, “Keep it simple.”

    Perhaps Rachel Ray’s French Dip Sandwiches would be an easy thing for the neighbor. Both the au jus and the roast beef are store bought items that get spiced up a bit at home. The au jus can easily be spruced up a bit with some fresh herbs and/or crushed red pepper, etc.

    My mom used to make turkey apple sandwiches and they are so good and so incredibly easy.

    You buy turkey breast (either lunch meat, or those small breast that are still intact and slice your own slices so they’re a little thicker), apples (any kind that are your favorite but I love to use fuji), honey mustard (we buy the O’Charley’s brand, or you can make your own), cheddar cheese, and raisin bread.

    Butter the bread since you’re going to grill it, then layer sliced cheese, slived turkey, apple slices, then honey mustard, then top with other slice of buttered bread. So easy and so fantastic!

    Top Chef had the “Ba-da-bing Betty” soup and sandwich combo that looked great a few weeks ago. I believe it’s now on the TGI Friday’s menu. The sandwich has portabello mushrooms, cheeses, and caramelized onions.Here’s the link: http://www.bravotv.com/Top_Chef_2/toprecipe/episode_3.shtml

    How about paninis? All you need is thick, crusty bread and some fillings – mozzarella, tomato and basil; proscuitto and arugula; ham and swiss…really anything will work.

    Monte cristos are always fun – I just saw a recipe in my latest issue of Cook’s Country.

    My personal fav is grilled chicken sandwiches. I make a few varities – one with onions and peppers that I cook over low heat until they’re meltingly tender, then pile them up on a crusty roll with the chicken and a good slathering of mayo. The other is the chicken with roasted red peppers from a jar, basil mayo, thinly sliced red onion, and some lettuce.

    Even something as simple as buying some good cold cuts, tomato, lettuce on soft bread.

    If you guys like tuna salad, you’ll love this recipe. This is the only way I make tuna salad sandwiches since I found this recipe. I make it with Trader Joe’s tuna packed in olive oil.
    Val

    1 can of tuna fish packed in olive oil (do not drain the oil)
    1/3 cup of cottage cheese
    2 Tablespoons of mayonnaise
    1/4 purple onion, chopped finely
    1 celery stalk, chopped finely
    1 Tablespoon of capers
    Juice of half of a lemon
    Pinch or two of dill
    2 Tbsp minced fresh parsley
    1 teaspoon of Dijon mustard

    (optional – lettuce and sliced tomatoes)

    Serve on lightly toasted french bread slices.

    Speaking of panini, I recommend this Smoked Turkey Panini from (of course) Rachael Ray. I blogged about it here.

    I make mine on the Foreman Grill and it couldn’t be easier!

    One of our favorite sandwiches is the Chicken Tender Panini with Tomato Chutney. My husband and I tried a sample and made sure we had the recipe and ingredients in hand before we could leave the store. Quick, easy, and yummy!
