I have plenty of reusable shopping bags since New I have plenty of reusable shopping bags since New Jersey banned the plastic ones last year. But when I spied this beauty for a buck, how could I resist? It just is so darn happy, which makes me happy. The little things aren’t so little. 💛

I’ve been on a smoked salmon kick lately (it’s I’ve been on a smoked salmon kick lately (it’s so good for you), so when I saw that a local patisserie has a smoked salmon croissant available (weekends only), I added it to my list of things to seek out. I popped into @chocolatinenj early on Mother’s Day and was rewarded with this deliciousness. Layers of soft flaky croissant dough, tender smoked salmon, light whipped cream, thinly sliced red and green onion slivers and dotted with capers… it was every bit as amazing as you’d imagine it would be. If you’re local, don’t sleep on this one. 😋

1/ hit up a few yard sales and snagged this beautiful pasta dish from Italy with my favorite color for a buck, 2/ and one of these printer trays came home with me too, 3/ pre Mother’s Day celebrations with 30 local moms, 4/ finished the weekend supervising furniture assembly
Today would have been my friend Cathy’s 53rd bir Today would have been my friend Cathy’s 53rd birthday. Unfortunately she’s not here to celebrate because she died suddenly at age 49. I think of her often … every Mother’s Day because we spent most of them together since her husband worked weekends … when I discover a new food adventure (we once did a day long donut crawl) … when I’m sharing a special time with my kids knowing that her then-11 year old is growing up without her. Before she passed, I always appreciated every day, but since then, even more so. You never know what the next day can bring, so relish in the sunshine, surprise rainstorms, making wishes over railroad tracks and all the wonderful randomness life can throw your way. Don’t waste a single second, say yes, live on the outskirts of your comfort zone, laugh often, tell people you love them, give eight second hugs, and squeeze every ounce of joy you can out of life. Do it for the people who can’t. ✨

A Portuguese Inspired Meal

Tonight I get a night off as The Sister-In-Law takes over with her very first post here on Sweetnicks. We went to dinner at her house this past weekend, and after a delicious meal, it was only fitting that she tell you all about it.

With the holidays around the corner, I figured what better time to have my brother, Cate and the kids over for a Pre-Christmas Dinner. They had not seen my new townhouse yet and I was eager to show off the new pad and my new Christmas tree. Unlike Cate, I didn’t round up my cookbooks to find the perfect recipe. I’m more of the spur-of-the-moment kinda gal.

I was thinking fish and I remember my grandmother made this wonderful baked cod. It’s a delicious dish featuring mild fish infused with wine, capers and olive oil. It’s not a Cuban dish (go figure), it’s actually Portuguese, but not a total surprise considering we grew up in a Portuguese neighborhood.

So on to my menu, Grandma’s Baked Cod, Rice Pilaf (okay I cheated on this one… Near East) and Roasted Tomatoes using a recipe from Ina Garten, The Barefoot Contessa. For starters I had a platter of cheese, salamis and olives (for the boys) and Prosciutto-Wrapped Asparagus (for the girls).

I am pleased to say dinner was a success … so much so that I was asked to write my first post here. I hope you enjoyed it as much as I have. The cod recipe is below – enjoy!

The Sister-In-Law

Portuguese Baked Cod

1-1/2 lbs Fresh Cod
2 Baking Potatoes – sliced
1 Large Spanish Onion
2 Red Pepper
1/2 Lemon
1/4 Cup White Wine
1/4 Olive Oil
1 tbsp Capers
1/3 tsp Paprika
Sea Salt & Garlic Powder to taste

Season fish with sea salt, garlic power and lemon juice. I like to season the fish an hour before baking for added flavor. Slice the potatoes as if for chips and coat with olive oil. Leave remaining oil for fish.

Line a baking dish with the potatoes and place the fish on top. Cover fish with the onions, peppers and capers. Pour the olive oil over the vegetables and add the wine. Sprinkle with paprika for coloring. Bake at 375 for about 45 minutes or until the fish flakes with a fork.

    Yummy, we had this 2 xmas ago, and it was great! we topped it with mozzarela cheese… Happy Holidays and Cheers for the upcoming new year!

    This sounds wonderful. If you took out the peppers and paprika, this would be Greek! But, hey, any Mediterranean food will do for me! Great recipe.
