Thighs Over Rice
I love making recipes with quirky or fun names and have many made a dish based on the name alone… Mrs. Potato Head Potatoes (so good!), Better than Sex Cake (google it for countless different takes of it), Sex in a Pan (totally different than the cake, this one is more along the lines of a breakfast danish) and Thighs Over Rice are a few examples. With kids in the house, sometimes serving a dish with a silly name will entice them into eating it … and kids or no kids, they’re just fun to say.
Thighs Over Rice hit the table again last week, and it’s a perfect dish for weeknights when time is short and hunger is raging. Using ingredients you might very well have on hand, it comes together easily, takes very little thought and you’ll be sitting down to dinner in under an hour. It’s flexible enough that you can change out ingredients to give it your own little twist, whether it’s the chicken pieces or the seasonings. If you’re not a big fan of dark meat, it works just as well with breasts and makes ‘em nice and juicy … and then you can call that version Breasts on a Bed.
