Banana Pancakes

banana-pancakes.jpgNo sooner did we walk in the house after school did Nicholas ask if I could make Banana Pancakes. He’s been on a pancake kick lately, and that’s not something I would say no to. Luckily we had just come home with a fresh bunch of bananas, so in the midst of making dinner, I made a batch of Banana Pancakes for him while he did his homework.

A smidge of butter on the top and a little bit of maple syrup, he barely waited for the pancake to cool off before he dug in. Coming up for air a few minutes later, he asked for a second one. In about fifteen minutes, he polished off two regular size pancakes, and then went on to eat a full dinner, followed by half a pound of fresh fruit. Methinks that we’re in the midst of a growth spurt.

Banana Pancakes

1 cup all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas, mashed

Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas. Stir flour mixture into banana mixture; batter will be slightly lumpy. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

Cate’s Notes: I add about 1/4 teaspoon of cinnamon and 1/2 teaspoon of brown sugar to the batter. I also mix everything in one bowl.

    i’m unfamiliar with the pairing of the words “little bit” and “maple syrup.” :)
    seriously though, i do tend to douse my pancakes in syrup. good stuff.

    Sarah and Ricki - one of our favorite pancake recipes. We have it taped to one of the kitchen cupboad doors since we use it so often.

    Patsy - not an everyday thing, believe me. But 10 minutes start to finish, it’s easy and makes him happy. :)
