Midnight Snacks
At night, once the kids are in bed, I start working on my freelance writing projects. This way, it doesn’t get in the way of my regular full-time job, nor my family time. But that means I always find the need to do something to keep up my energy level (and most importantly, my eyelids open!) during the 8:30-midnight hours. A few months ago, I stumbled on a new midnight snack that did just the trick.
Toast an English muffin, spread it with peanut butter and sliced bananas, toast again and then drizzle it with honey. Mmmm, so good and it totally does the trick. Tonight when Nicholasand I ran out to get a few groceries, I spied something very similar in the freezer section of the store from the folks at Smuckers. Crustables made with whole wheat bread and stuffed with peanut butter and honey. Very close to my own homemade version and equally good. Delish to the last bite and with the whole wheat bread, a smidge better for you. Besides, peanut butter is a good fat. ;)

A tablespoon of good chocolate chips-melted in the microwave with a banana. Yum.

Similar to your snack, I go for peanut butter with graham crackers. Sometimes some chococlate chips melted on top (via the microwave). Other than that, cereal of any kind!

Anything from Corn Chips to Ice cream or even fries. oh, so unhealthy!

Sounds good. I don’t have a midnight snack or late night snack. Since I go to bed at 9pm. lol My favorite mid-afternoon snack at work is Reese Peanut Butter Cups or Peanut Butter Crackers.

I usually go for a peanut butter and grape jelly sandwich.

toast, smeared with peanut butter and nutella . . . and topped with a banana, if we have any. mmm. and that was totally inspired by your snack.

One cup of Skinny Cow Milk (regular or chocolate), one large banana, and a couple handfuls of ice cubes whirled in the blender. Talk about refreshing!

i love bananas and peanut butter, oh man!! i might also go for some fluff on that peanut butter too. i’m trying to think of something else more original but i’m flailing. do girl scout cookies count? ha. hope all’s well, cate! - m

peanut butter and yellow cheese sandwich. that does the trick
