I have plenty of reusable shopping bags since New I have plenty of reusable shopping bags since New Jersey banned the plastic ones last year. But when I spied this beauty for a buck, how could I resist? It just is so darn happy, which makes me happy. The little things aren’t so little. 💛

I’ve been on a smoked salmon kick lately (it’s I’ve been on a smoked salmon kick lately (it’s so good for you), so when I saw that a local patisserie has a smoked salmon croissant available (weekends only), I added it to my list of things to seek out. I popped into @chocolatinenj early on Mother’s Day and was rewarded with this deliciousness. Layers of soft flaky croissant dough, tender smoked salmon, light whipped cream, thinly sliced red and green onion slivers and dotted with capers… it was every bit as amazing as you’d imagine it would be. If you’re local, don’t sleep on this one. 😋

1/ hit up a few yard sales and snagged this beautiful pasta dish from Italy with my favorite color for a buck, 2/ and one of these printer trays came home with me too, 3/ pre Mother’s Day celebrations with 30 local moms, 4/ finished the weekend supervising furniture assembly
Today would have been my friend Cathy’s 53rd bir Today would have been my friend Cathy’s 53rd birthday. Unfortunately she’s not here to celebrate because she died suddenly at age 49. I think of her often … every Mother’s Day because we spent most of them together since her husband worked weekends … when I discover a new food adventure (we once did a day long donut crawl) … when I’m sharing a special time with my kids knowing that her then-11 year old is growing up without her. Before she passed, I always appreciated every day, but since then, even more so. You never know what the next day can bring, so relish in the sunshine, surprise rainstorms, making wishes over railroad tracks and all the wonderful randomness life can throw your way. Don’t waste a single second, say yes, live on the outskirts of your comfort zone, laugh often, tell people you love them, give eight second hugs, and squeeze every ounce of joy you can out of life. Do it for the people who can’t. ✨

Going Old School: Potato Chip Cookies

Potato Chip CookiesWhen Nicholas asked what we were making tonight and he heard “Potato Chip Cookies,” he was instantly intrigued.  A cookie that has been around forever, I’ve actually never made them before although I have a vague recollection of my mom making them for us growing up.  After seeing how simple the recipe is, and that it used ingredients I already had on hand, it quickly became the after dinner activity tonight.

With only six ingredients, the dough mixes up in no time.  I omitted the pecans, because I didn’t have any on hand.  I did have walnuts, but to me, walnuts and pecans are not always interchangeable and I didn’t think they’d be right with this cookie.  Thin, light, buttery and so good, these would be a perfect throwback retro cookie for all the holiday cookie trays that loom in your baking future over the next few weeks.

With the country in what’s officially now called a recession, more and more people are looking to make gifts this year and the media is quickly jumping on the bandwagon with suggestions.  Recession or not, gift or not, this is a nice one to whip up for any occasion or just because.  If you’d like to give these as a gift, you can make them yourself and present them on a prettily wrapped plate, or give the mix in a jar along with the directions.  Just layer the sugar, crushed potato chips, flour and pecans in a festive jar and attach a nicely decorated tag with the remaining wet ingredients listed and then the directions.  Everyone likes homemade gifts from the heart, don’t they?

Potato Chip Cookies
Recipe courtesy of Paula Deen
Yield: 3 dozen

3/4 cup sugar
1-1/2 cups crushed potato chips
2 cups all-purpose flour
1/2 cup finely chopped pecans
1 cup (2 sticks) butter, softened
1/2 teaspoon vanilla extract

Preheat oven to 350.  In a large bowl, combine sugar, potato chips, flour, pecans, butter and vanilla.  Stir until well blended.  Shape into 1-inch balls and place on an ungreased cookie sheet.  Dip bottom of drinking glass into sugar and use to slightly flatten balls.  Bake for 14-16 minutes, or until slightly brown.  Remove to wire rack to cool.

    My mom used to make those when my nieces were little! It was a fun and easy activity for them to do together. :)

    I’ve got baked goods planned, but am still finalizing my list for gift giving!

    I haven’t thought of these in years. My sister-in-law introduced me to them a while back. We also omit the nuts. Yum!

    My boys are making magnets and embellishing thrift store serving spoons with imaginative Sculpey handles for their teachers. We will also make peppermint bark for gifting.
