Recipe: Pasta Bolognese

December 4, 2019 · Narrative

Thick, rich and hearty, this Bolognese sauce is perfect for a lazy Sunday supper, or to stockpile in your freezer.

I sometimes see posts making fun of how bloggers will write four paragraphs as a preamble to the recipe, when all readers really want is the recipe. I do sometimes feel that way too, but in the interest of a happy medium, let’s do a few lines of a brief description and get right to the star of the show … this Bolognese Sauce.

I got this recipe from an old friend a million years ago and have tweaked it along the way and the end result is a thick and hearty pasta sauce that will warm you from the inside out. This is one of those recipes that you take a small taste from the pot to see if you have to adjust your seasonings and then you find yourself going back for more. Three meats, carrots and onions, a couple other simple ingredients and a low simmer for just under two hours. I usually double the batch and freeze half of it to save me on a busy weeknight. Add some garlic bread (this one is a favorite) and a nice green salad and you have the perfect simple and delicious meal for company.

Enjoy!

Pasta Bolognese
Recipe courtesy of Cate O’Malley

3 tablespoons extra-virgin olive oil
2 tablespoons butter
1 large carrot, finely diced
1 medium onion, diced
3 cloves garlic, sliced
½ pound ground sirloin
½ pound ground pork
6 oz. pancetta or prosciutto, diced
1 small can of tomato paste
1-1/2 cup milk
2 cups dry white wine (sauvignion or fume blanc)
Kosher salt and ground black pepper
Oregano
Parmigiano-Reggiano, for grating

In a large, heavy-bottomed saucepan, heat the olive oil and butter over medium heat. Add the onions, garlic and carrots and sweat over medium heat until the vegetables are translucent and soft but not browned (10-15 minutes). Add the beef, pork and pancetta and stir into the vegetables. Add it over high heat, stirring to keep the meat from sticking together until browned. Add the tomato paste, milk, and wine and simmer over medium-low heat for 1-1 ½ hours, stirring occasionally. Season with thyme, salt and pepper to taste.

Recipe: Italian-Style Turkey Meatballs

October 20, 2014 · Narrative

Easy to assemble meatballs that are tender, flavorful … and everything they should be. Have Sunday Supper any day of the week.

image

Last week was a little touch ‘o crazy. Between dentist appointments, cheer, and Girl Scouts, followed by technology and leadership meetings for Nick, dinner all week largely felt like an after-thought. Like we were grabbing something on the fly and just not connecting the way we should. The way I needed to. The way families need to.

So while the kids were with their Dad this weekend, I made plans for a nice, peaceful meal with them upon their return on Sunday, going all out. Clearing off the dining room table from the massive amounts of Girl Scout paperwork, and frames and photos from a project I’m working on. Setting the table with place mats, napkins, and nice dishes. Turning on an iTunes playlist for some nice background music.

And cooking.

I left Sunday afternoon open for just this purpose. To cook.

I knew I wanted to make something Italian, because I feel I don’t do that often enough.

#ItalianMomguilt

And when I spied a new meatball recipe from Mario Batali, the plan quickly came together.

Meatballs with red wine-infused marinara sauce.

A side of whole wheat tortellini.

Brownies for dessert.

As soon as the kids walked in, they headed straight for the kitchen.

“Mealballs? Awesome! Who’s coming for dinner?”

Surely not helping with the #Momguilt.

But the end result was exactly what I wanted.

A nice meal at home, together. Talking about our weekend. Savoring a home-cooked meal. And thoroughly enjoying the moment.

The meatballs come together quickly, and by using ground turkey, instead of the usual ground beef, they are slightly healthier. Even more so once I swapped out the regular bread crumbs for whole wheat bread crumbs. Once the meatballs are formed, they head for the oven, so no frying in oil either. The marinara sauce is flavored with red wine and garlic, and, well, you can only go up from there. The flavors all come together during its one hour in the oven, and it made for a perfect Sunday supper.

Recipe: Marcella Hazan’s Tomato Sauce

May 28, 2014 · Narrative

Cook all day flavor from a forty five minute spaghetti sauce recipe? Marcella Hazan has got us covered.

image

When it comes to the age old debate as to whether you top your spaghetti with sauce or gravy, honestly I don’t care what you call it. I have always thought that the kind that cooks for several hours and has meat in it is more often referred to as gravy, and the quicker versions without meat are sauce.

But in the grand scheme of world events? It doesn’t matter.

This recipe is called sauce because Marcella Hazan says so.

With Girl Scouts, soccer, and track occupying a few of our nights, I like to have under-an-hour recipes in my repertoire so we are still eating healthy and avoiding drive-thrus.

Because. Ick.

And when that doesn’t work, breakfast for dinner is always an excellent option.

When the kids asked what was for dinner the other night and I answered “spaghetti and red sauce,” I was met with a chorus of “Yesssses!” Followed by a little voice asking if she could have the noodles with just butter.

We’re in a phase. And she knows what she likes. I’m ok with that.

Just a handful of pantry ingredients simmering on the stove. Super low maintenance and mostly hands-off. Which give you just enough time to throw together a quick salad or fresh fruit, and cook the pasta.

In forty-five minutes, your dinner is done.

And truth be told, the sauce is good at the thirty minute mark too.

Nick hosed down two plates of spaghetti before coming up for air.

And then only to ask for leftovers for his lunch the next day.

I’d say that’s a ringing endorsement if I ever heard one.

This sauce is one of my frequent go-tos because it’s not heavily weighed down by adding countless herbs and spices. I mean, seriously. This is a four ingredient sauce that is all about the tomatoes.

Which is exactly as it should be.
