Recipe: Falafel Spiced Turkey Burgers {Whole30}

February 18, 2020 · Narrative, Whole30

Those hints of falafel seasoning mixed with ground turkey serves up one delicious bite after another – let’s make Falafel Spiced Turkey Burgers!

Turkey Falafel Burger

I love falafel, and its seasoning, so when I saw Molly Yeh make these Falafel-Spiced Turkey Burgers on a recent episode of Girl Meets Farm on Food Network, I made a mental note to go look up the recipe. There was only one problem … I was doing a round of Whole30, and her recipe wasn’t completely Whole30-compliant. A couple small tweaks and changes and here we are … a crazy delicious Turkey Burger recipe that is packed with flavor and kid-approved! My oldest loved them, and some mornings, I even crumbled a few pieces into my scrambled eggs. So freaking good, guilt-free, quick, and healthy. I loved them so much I actually made the recipe four times over the course of ten days! Winner, winner, turkey dinner!

Recipe: Turkey, Spinach, and Feta Sliders

March 22, 2016 · Meat and Poultry, Narrative

A delicious burger that takes twenty minutes from start to finish … and neatly checks that “ate my vegetables” box? Yes, please.

Untitled

This could be titled: A Recipe That Got My Kids to Eat Spinach.

But I don’t want to make it out like they don’t eat vegetables, because they totally do.

Nick would eat salad every day if he could.

Madeline eats grape tomatoes like they’re candy.

And they both love artichokes and roasted broccoli with wild abandon.

So no complaints from me.

And quite honestly, they both will eat spinach in the Spinach Cheese Squares we make often.

So, #winning all around.

But if I can find a new way for them to kinda sorta like a vegetable they really don’t?

Even better.

And these cute little sliders are just that.

They take less than ten minutes to mix together and are super stuffed with fresh spinach, a few pantry items, and feta (get the good kind! Dodoni! Not the already crumbled kind).

Once the burgers were cooked up (I used a stovetop grill pan I got a few years back, similar to this one), everyone topped them differently.

Which is the great thing about burgers.

Add your own personality to them!

The kids just went for straight-up ketchup.

While I tend to subscribe to the “mo toppings, mo better” camp and topped mine with caramelized onions, homemade mayo, and a few homemade bread and butter pickles that a friend made for me.

So good … and dinner was completely ready to go in less than 20 minutes.

YES.

Recipe: Greek Turkey Burgers

August 19, 2013 · Narrative

Untitled

When I made these Greek Turkey Burgers for dinner last week, Nick took one or two bites and promptly told me he didn’t like them. I swore up and down that I had made these before and he loved them, and came here to look up the post so I could prove it to him.

And, unfortunately, it looks like he was right.

I know I have made a million and one turkey burger recipes before, but the last one that he loved turned out to be the Thai Turkey Burgers from a few months ago.

Which basically means this wasn’t his most favorite dinner ever.

But also that I hadn’t yet shared the recipe here.

And since *I* happened to really like the burgers, I’m sharing.

(For the record, his objection is the feta. No matter how much I think he should love it as much as I do, he doesn’t).

Turkey burgers are a great go-to when you’re looking to satisfy a burger craving, but you don’t quite want all the fat that a “regular” burger might deliver. And this one? Where some vegetables are snuck in? All the better.

The roasted red peppers bits really help deliver moistness, which is a key to having a flavorful turkey burger, and I promise you, you won’t even know the spinach is there if you’re anti-spinach (so, sneaky vitamins!). And the feta? Well, that just puts it over the top, in my opinion. It gives the burger that nice strong tang that helps it pack a serious flavor punch. If you don’t like feta, substitute your favorite cheese in its place.

Serve it up with a side of roasted vegetables and you have a pretty awesome, complete, healthy Greek-inspired meal that is perfect for summer time … or any time.

Although I’m currently not eating carbs, this would be amazeballs with sliced avocado, a runny egg, and a nice crusty bun.

Making my mouth water just thinking about it.

Make it, you won’t be disappointed.

*If you happen to be on TSFL, this is totally approved.

Tomorrow? A visit to the air show.

Recipe: Mushroom-Crusted Chicken Burgers

May 13, 2013 · Narrative

Untitled

“Eww, what is this?” Nick said with a visible shudder as he handed me the package I asked for.

Dried up mushrooms, I answered.

“Yuck.”

Well, you weren’t saying yuck when you ate them last week.

The what’chu talkin’ ’bout Willis glare was shot my direction quickly enough.

Remember those burgers you loved last week? The crust was made from these mushrooms.

I got a quick nod and he was off his merry way.

Unlike Jessica Seinfield’s sneaky shenanigans when it comes to hiding vegetables, those dried up mushrooms were left, right, and center.

Like, they couldn’t have been more obvious.

But neither Nick nor his sister asked one single question as they polished off their burgers.

And so another battle was won. While neither of them will knowingly eat mushrooms, it’s apparently a-ok if they’re mashed into the top of their burger.

I’ll take my victories where I can.

I spied this recipe on Annie’s Eats a few weeks back, and they couldn’t be easier to make.

This is for when you have a hankering for a burger, but don’t want to be guilt-ridden hours later.

This is for the cah-razy weeknights when you need a quick meal for the family, but want to avoid the drive-thru at all costs.

And this is for when you’re entertaining, and you’re looking to keep it casual, with a slight upscale twist.

For all those reasons.

And just because.

Super simple to make. A juicy, healthy burger. Bursting with flavor.

Just make ’em already, and you’ll see what I mean.

Tomorrow? April Instagram in Review.
Wednesday? Children’s book review.

Recipe: Chickpea Salad

April 14, 2011 · Clean Eating

Chickpea SaladI love chickpeas.  In a salad bar salad.  As a snack on their own.  In Mediterranean recipes.  And I love that they’re part of hummus, which can always be found in our refrigerator.  One of these days, I need to share Beth’s hummus recipe.  Good stuff.  But for today, a recipe from me … Chickpea Salad.

Super simple, and a perfect way to take advantage of whatever crisp lovelies your local grocery store or farmer’s market are offering up.  Use it as a guideline and mix and match with some of your own favorite ingredients too.  And if you want to change it up even further, instead of serving it as a traditional salad, as I did, it also tastes great in lettuce leaves or wrapped in a tortilla with a protein of your choice.

However you serve it, it’s a great way to celebrate Spring flavors and chickpeas… all in one yummy bite.  Ripe, buttery avocado?  Check.  Fresh cilantro?  Check.  Juicy tomatoes?  Check.  Guilt-free eating?  Check, check, check.

As if you need another reason to eat chickpeas, did you know that one serving gives you 51% of your recommended daily needs for fiber?  It is packed full of good stuff, helps fight off bad cholesterol, and is clean eating at its finest, so eat up, baby!

I’ll be back here tomorrow with an extra post for the week… until then!
