A super quick, sure to impress, stuffed jalapenos recipe featuring bacon. And really, how can you go wrong from there?
On Mondays, I try to have my blog post written earlier because I want to watch The Bachelor live so a girlfriend and I can do a play-by-play on everything that went down.
Because, well, how better than to exclaim with shock when you hear some of the things that come out of The Bachelorettes’ mouths? And if there isn’t a drinking game for Juan Pablo’s go-to line of “…es ok,” well, then, there should be.
So tonight’s post had to be an easy one to write. So I’m not behind on Bachelor shenanigans.
Of course I went with bacon.
Because, you know … bacon.
I first made this new-to-me bacon-wrapped stuffed jalapeno recipe last weekend when friends came over.
So this weekend, when I needed a go-to, sure-to-impress appetizer recipe while entertaining a new friend of the male persuasion, I made these again.
Because, you know … bacon.
And as he said after his first bite, “…these are f***ing good,” and then he followed that up by apologizing for swearing. Which was then followed with asking me how I feel about swearing.
Now, in all honesty, me and jalapenos do not have a good track record. Which means I mostly avoid cooking with them, because oh the burn! No matter how careful I am, I always end up cursing the moment that I decided to cook with jalapenos and swear I will never do it again.
But then I find a recipe with bacon and all bets are off.
Last weekend, I was.so.very.careful. Washed my hands a MILLION times. Carefully de-seeded the jalapenos, since that’s where the bulk of the heat lies. Even rinsed the jalapenos again after that. But then, hours later, and even again the next day, I rubbed my eyes and felt the burn.
And swore off jalapenos. Again.
But these were just too darn good to not try again.
Apparently I am nothing if not a glutton for punishment.
This time, I still washed my hands a MILLION times. And still carefully de-seeded the jalapenos. And rinsed them again. But I did it all while wearing a pair of food-safe kitchen gloves.
AND THAT MADE ALL THE DIFFERENCE IN THE WORLD.
And I rubbed my eyes, just to be sure.
So don’t let the jalapenos scare you. Just get gloves.
Now that we have the jalapeno issue out of the way, the rest of this recipe is super simple. Which, you know, is my favorite kind of recipe. Softened cream cheese mixed with a bunch of spices you likely have on hand in your cupboard. Stuff the pepper with a smear of the cream cheese blend. Wrap the little suckers with bacon. Bake for 45 minutes until the bacon is nice and crispy.
It even cooks beautifully in the toaster oven if your regular oven happens to be full of a roast beef doing its thing. Just sayin’.
The recipe originally comes from Doughmesstic, and since I didn’t change a thing, I’m going to send you over there to get it. But make sure you do, because it’s not to be missed.
And now to catch up on The Bachelor finale.
