1-1/4 cups water
1 stick of margarine
1 cup uncooked oatmeal (quick cooking oatmeal)
2 eggs
1 cup white sugar
1 cup brown sugar
2 tsp cinnamon
1 tsp soda
1 tsp vanilla
1-1/3 cups flour
Bring to boil water and margarine. Add oatmeal. Take off heat and cover; let set 20 minutes. Stir together other ingredients. Add to oat mixture. Pour into greased 9×13 pan. Bake at 350 degrees for 35 minutes.
Topping:
1 cup brown sugar
1 cup Angel Flake coconut
1 cup chopped nuts
1 stick melted margarine
1 tsp vanilla
2 egg yolks
Before cake is done, make topping. Spread over hot cake and put back in oven about 7-10 minutes until top is bubbly and golden brown.
Hi Cate! Do you serve this cake warm or is it ok to be cooled and have sit for a day or so? My husband and I have a dinner party Tuesday night and I wanted to take this cake but I don’t think I can get it done between work and the time we have to be there. Any ideas?
Hi there! Room temp the next day is fine. Have you tried the Cinnamon-Apple Cake? Love that one and a great Fall dessert (also can be made ahead and should be served room temp).
