Today was an official “clean out the fridge” day for dinner. I swear, there is no way I could have fit anything else in there, even with the extra space I got from throwing out that little orange box of baking soda (see yesterday’s post). We had a ton of leftovers, everything from Chinese food and McDonalds’ Chicken Nuggets to the pasta from last night and the Lasagna Rolls from Friday. Now I can officially see the light in my refrigerator!
I did manage to make one new recipe today — Strawberry Bread. Delicious stuff and simple to make. Strawberry prices aren’t so outrageous now, so pick up a few next time you’re at the store and whip this beauty up. It makes two loaves — one to save and one to share.
Strawberry Bread
(makes 2 loaves)
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1-1/2 teaspoon cinnamon
2 cups sugar
4 eggs, beaten
1-1/4 cup vegetable oil
2 cups fresh chopped strawberries
1 cup chopped walnuts
In large bowl, combine first 5 ingredients. Add egg and oil; mix well. Stir in berries and nuts until evenly distributed – batter will be thick. Grease & flour two 9″ loaf pans and divide batter evenly into each. Bake at 350 approx. 1 hour. Cool in pans for 10 minutes. Invert onto wire rack to cool completely.
Yes, we do that every Wednesday (or Tuesday, if we remember to get stuff out for trash night) since we food shop Thursdays. Right now, I can’t fit a single thing in our fridge, and we have a big shopping list!
Glad to see I’m not alone. It was an embarrassing amount of stuff that had to be thrown away, so I’m resolving to be better with that. The best laid plans…
