I don’t eat French fries often, but when I do, I I don’t eat French fries often, but when I do, I’m going to make it count. Doo Wop Eats opened a few months ago in downtown Denville and their fries are LEGIT. They are hand cut and taste the way fries should … like potatoes! I add a sprinkle of salt and dunk them in a side of their special sauce and they are pure perfection. You can order a small bucket or a large one (better for sharing!), or as a side item with one of their other delicious menu items like their cheeseburgers, fried chicken sandwiches or cheesesteak. I do believe they’re the best fries in town. I said what I said. Doo Wop’s menu celebrates all your favorite Jersey shore boardwalk treats, including Fried Oreos, clam strips and milk shakes and has a fun vibe for kids and families. 😍
The Grinder Salad, a recipe I found on tiktok that The Grinder Salad, a recipe I found on tiktok that takes all of your favorite ingredients from a grinder (or sub) sandwich and makes it into a delicious chopped salad. It’s as easy as putting everything in a bowl and chopping it up. Perfect for busy days and lazy nights, light meals and warm weather choices. Ingredient list below. Enjoy!

One bag or arugula
One container of cherry tomatoes 
Quarter pound of hard salami
8 Oz of fresh mozzarella
One small red onion
1/3 cup banana peppers 
Handful of fresh basil
Half cup Italian salad dressing
3 T Kewpie mayo
2 T red wine vinegar 
Sea salt and black pepper

Chop it all up, add a half box of ditalini pasta, cooked. Mix to combine.

We had a fun little board party this week and the We had a fun little board party this week and the delicious whipped Brie I shared earlier was front and center. If you haven’t heard of board parties, it’s when every guest makes a different type of food board and brings it - so much fun noshing ensues! With toasted baguette slices, cornichons and local honey, this was mostly a French-inspired board. So simple to pull together and totally my kind of meal.

It was thick and juicy and cooked to perfection. Love that the lettuce was shredded, and that the bun was toasted and slightly crispy. If you’re local, pop in and give them a try - don’t miss the fries!

Despite living in the Northeast, our Winter has had hardly any snow. Not to worry though, we’re going to be having snow in the Spring at this point. 😂 End of the week has a high of 50 degrees, today we lived in a snow globe with awful wind. I don’t even care what freaking season it is, just PICK ONE. And for the love of all things holy, I desperately need sunshine.

Day #1 of Memorial Day Weekend – Rain!

At least it held out until around dinner time, so the bulk of the day was pretty enjoyable. Hopefully tomorrow will be better.

Went to a local Art Show and purchased an artist’s drawing of a restaurant in Little Italy, NYC, Paesano. This happens to be one of our favorite restaurants in Little Italy, so we were thrilled when we saw the drawing … makes us want to plan a trip there again soon.

I felt a little guilty that I hadn’t cooked in the past two days, so made sure to do some cooking tonight. I made Spicy Picnic Chicken with Easy Cheesy Salsa Potatoes on the side. The recipes could not be easier, and both were in the oven, happily baking within 15 minutes. The chicken was very flavorful and moist, and I’d definitely make this one again. The Husband is REALLY particular about his potatoes and didn’t care for the ones I made today. Nicholas took one bite and promptly spit it out. That said, IF I made it again, I’d take out the salsa and leave the rest as is; but with only me eating it, I doubt I’d make this one again (don’t like it well enough for company).

Heading down the shore tomorrow for a day trip, so a little R&R is in order. My parents bought a new shore house, and I only know a little bit about this particular area, so I was browsing the net to find some fun things to do. While doing that, I stumbled on a great directory of Farmer’s Markets in NJ. ‘Tis the season, and with my newfound interest in canning, I’m planning on hitting the Farmer’s Markets weekly. In case you’re in NJ, or near it, thought you might be interested in this.

P.S. If you have any great tried-and-true recipes using buttermilk, send them my way. I have some to use up after making tonight’s chicken.

Spicy Picnic Chicken
1 cup buttermilk
1 package (1.25 oz) Taco seasoning
1 cup bread crumbs
1/4 cup all-purpose flour
1-2 teaspoons salt
1/2 teaspoon ground black pepper
8 pieces bone-in chicken, dark meat
3 tablespoons butter, melted

Heat oven to 400. In shallow bowl, mix buttermilk and 1 tablespoon of the taco seasoning mix. In another shallow bowl, mix the rest of the taco seasoning mix, bread crumbs, flour, salt and pepper. Dip chicken pieces in the buttermilk mixture and them coat with the breadcrumb mixture. Place in a single layer in a greased baking dish. Repeat with all the chicken pieces. Drizzle melted butter over the chicken and bake for 45-55 minutes, until chicken is fork tender and juices run clear.

Easy Cheesy Salsa Potatoes
8 oz. (2 cups) shredded Cheddar cheese
1 cup salsa
1/2 cup finely chopped onion
1/2 cup sour cream
1 (10 3/4-oz.) can condensed Cheddar cheese soup
1/2 teaspoon pepper
1 (24-oz.) pkg. (about 8 cups) frozen hash-brown potatoes, thawed
1/2 cup bread crumbs
1/4 cup butter or margarine, melted

Heat oven to 350°F. Grease 13×9-inch (3-quart) baking dish or pan. In large bowl, combine cheese, salsa, onion, sour cream, soup and pepper; mix well. Add potatoes; mix well. Spread in greased dish. In small bowl, combine bread crumbs and butter; mix well. Sprinkle over potatoes. Bake at 350°F. for 45 to 60 minutes or until cheese is melted and potatoes are tender.

    Julie – thanks for stopping by, and for the recipe links. Printed them out now. Planning a Southern meal for company this week, and think the cornbread would be a perfect addition. I’ll add you to my blog list.
