Had a dentist appointment today before dinner to get 2 cavities filled. The dentist, being wonderful and knowing how much I loathe going, actually got them done in record time – 20 minutes!! Nicholas begged to go with me and had his first trip to the dentist. He was quite the trooper, sitting in a chair on the side, asking me questions. Of course, my grunting answers just frustrated him, but he was very intrigued by all the tools and gadgets.
The Husband was being helpful and said he’d take care of dinner (yay!!) and I suggested leftovers because, once again, the refrigerator is bulging. Well, regular readers will know how much The Husband LOVES leftovers … not! I came home, very numbed up, and The Husband made Picadillo with Black Beans and Rice, conveniently skipping over the leftovers. It actually ended up being a good call since even right now, 3 hours later, the right side of my face is still pretty unusable, making eating difficult.
Nicholas had a GREAT day at school today and when I picked him up, he didn’t even want to leave! He actually stayed and colored for another 20 minutes or so before I could convince him to go. Since he’s only been there a week, that was really nice to see, kind of reinforcing our decision for the change in schools.
Signed myself and The Neighbor up for two cooking classes coming up. I’m looking forward to these. The first one is Hispanic Savory selections, and the menu includes Central American Chayote and Cucumber Salad, Mexican Tortilla Soup with Chicken, Avocado and Cheese, Dominican Sancocho (Homestyle Meat and Root Vegetable Stew) and Paste de Tres Leches (Three Milks Cake). The second class is a Latina Fiesta one and the menu includes South American-Style Avocado and Shrimp Salad, Argentine-Style Empanadas, Cuban-Style Ham Croquetas with Cumin-Lime Dipping Sauce and South American Ceviche. I’m going to get The Neighbor cooking yet! And hey, for $20, you get a 2-hour class, recipes AND get fed. You certainly can’t beat that!

I’ll be interested to hear how the Tres Leches cake turns out. I’m sure their recipe will not, like the one I’ve made, begin with a cake mix. Then again, that cake mix version has been so well received I’ve had a difficult time motivating myself to make a scratch version.
