Well, it could be worse. We’re in the middle of a Noreaster (or getting one?) and they said if it was snow, it would be 2-3 feet, so I guess we should be thankful it’s rain instead. I, for one, would be okay with 3 feet of snow … and the Snow Day that would follow. Remember how excited you were when you were in school and had Snow Days? Ahh….
No dinner report tonight, since I hit a drive-thru on the way home from an appointment. Contractor is coming tomorrow to replace the last section in our existing kitchen (before the addition starts) and it looks like I’ll be without a sink for a day or two, so who knows what’s for dinner tomorrow. It’s been awhile since we’ve gone out to eat, but in this weather, I always feel like staying put.

Cherry Coconut Bars
Yields: 3 dozen
1 cup flour
3 tablespoons confectioners’ sugar
1/2 cup cold butter
Filling:
2 eggs
1 cup sugar
1 teaspoon vanilla extract
1/4 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped walnuts
1/2 cup halved maraschino cherries
1/2 cup flaked coconut
In a bowl, combine flour and confectioners’ sugar; cut in butter until crumbly. Press into a lightly greased 13x9x2 baking pan. Bake at 350 for 10-12 minutes or until lightly browned. Cool. For filling, combine the eggs, sugar and vanilla in a bowl. Add the flour, baking powder and salt. Stir in the walnuts, cherries and coconut. Spread over crust. Bake for 20-25 minutes or until firm. Cool. Cut into bars.
I miss snow days! We don’t see very many in Phoenix…ok, we don’t see ANY. Hee hee….

I love that show too! I think he picks Meredith…but for some reason the “ex” will stick around to make things interesting. At least that’s my guess!

I hope he dumps his wife and gets with Meredith, I just started watching it like 4 weeks ago, and I like it too.
I made a healthier version of those Cherry Coconut Bars awhile ago just to use up some maraschino cherries. Addictive stuff, I tell you. I actually didn’t think they sounded good at all but then couldn’t stop eating them. I don’t make those anymore.;-)
Defintely hooked on GA. I hope he picks Meredith also, but I think they are gonna drag it out a bit more. I love George and everything he does, he is just too funny.
