No exciting dinner report tonight. I had a hankering for spaghetti with red sauce, so that’s what I ended up making. Simple and easy, starting off with a spinach salad with dried cranberries, candied walnuts, cheese and a maple syrup vinaigrette dressing I make.
Nice relaxing day today … got a lot done, but managed to squeeze in some “me” time as well. Rough night last night, Nicholas has a raging ear infection, so we started the morning off bright and early at the doctor’s office. Poor thing – doc said it was closerthanthis to rupturing his eardrum. He’s doing better now though, thankfully.

I remember when T (my DD) had frequent raging ear infections–had tubes put in twice; eventually had to have tonsils and adenoids removed. That was the cure. None after that. Hope Nicholas is feeling well soon!

Lin – no problem at all! I think it’s cool that they send your leftovers home wrapped in banana leaves. Definitely something we won’t be seeing here!
Cyndi – Nicholas definitely gets this from The Husband. I’ve gone 35 years with nary an ear infection. This was his 4th in the past year. He’s doing a bit better now though … thanks!
Seth – you hit the nail on the head. Comfort foods are the best! The salad was great. For the dressing, I just nuke maple syrup (about 1 cup or so) and then add in a few splashes of olive oil and balsamic vinegar with a little bit of salt and pepper. So easy and one of our favorites.

Patti – thanks. He’s doing a bit better. No, I didn’t know most calicos were female. I know, real original on the name, huh? I actually went in looking for an orange cat (never had one), but she was too beautiful to pass up.
