I had a whole menu planned for tonight’s The Neighbor Dines Over Sunday to celebrate The Neighbor’s birthday. I ended up scrapping half of the menu (of course, after I bought all the groceries) and did something different. The Neighbors have never had Indian food, and we had promised to introduce them to some of our favorites, so we ended up doing Indian take-out for the main part of the meal. I made some Bleu Cheese Chips as a munchie, and Fruit Pizza (with a birthday candle) for dessert.
As a side, I ended up making our Elvis Paninis, one of The Neighbor’s favorites, paninis with peanut butter, bananas and honey. Delicious! We kicked off the meal with Pina Coladas, because one week from today, we’ll all be enjoying pina coladas somewhere else, so we’re in official countdown mode. And nope, I’m not telling you where we’re off to, because I’m going to make it into a game, kind of like my take on Where in the World is Sweetnicks?! The Pina Coladas were a new recipe, from Martha Stewart herself. I’ll be writing about it as my first entry to Very Good Things. As soon as it’s up there, I’ll give you a heads up.
For Treats to the Office Monday, I made Wacky Cake. It made a recent appearance in a cooking magazine, but was apparently pretty popular in the 70s – first I’ve heard of it. Packed it off for The Neighbor to take into the office tomorrow, so she’ll have to make sure to report back on the verdict.
