The Husband got off easy tonight. We had the leftovers from last night’s Potato and Lentil Stew with buttered bread, and he made a Tomato and Avocado Salad. Perfect dinner. I always forget how much I love this stew — so easy to make and so healthy and yummy. A dollop of sour cream and chutney on top and I’m all set. Yesterday was perfect stew weather, with temps under 30; and, of course, in typical Jersey fashion, it reached 55 today. Go figure.
