I’m feeling a bit better today, but still off, so I didn’t each much. I quickly whipped up the Mushroom and Cheddar Fritatta that I had planned on making yesterday. Only minutes to make, relatively healthy and budget-friendly. It’s also real simple to swap out ingredients using what you have on hand.
