She is a fiercely loyal friend, is the best debater I know, and sleeps later than I ever did when I was a teenager. 😂 She is quiet and loud all at once and is forever the biggest cheerleader her brother and I could ever have. My rainbow baby is growing up before my eyes and I love it and hate it all at once. Love you to the moon and back kiddo. 💛

Another ARF/5-A-Day Tuesday is upon us, and with Spring and Summer fruit and vegetable bounty now coming into season, the possibilities are only limited to your imagination.

I was playing with a couple of ideas for our dinner tonight, but The Husband ended up beating me to the punch and making dinner on his own. Surprise! Since it included his House Special Roast Pork and Black Beans and Rice, I needed to get creative quickly to make sure to cover my ARF/5-A-Day bases. What to do?


After a quick scan of the refrigerator, I came up with a bunch of red, juicy, ripe tomatoes — perfect. Coupled with three avocados I had on the counter, I had a quick and simple plating, sliced tomatoes with avocados, dressed only with coarse salt and cracked black pepper and a drizzle of olive oil. Divine. And to top it off, Frozen Mudslides… The Husbands worked for a few hours on the swingset tonight, and it’s actually starting to look like something. Should be just one more night or two at the most before Nicholas and The Girlfriend can start enjoying it. They’re bursting with anticipation!

Hot Health Hint: According to the American Journal of Clinical Nutrition, although all fruits and veggies have them, the best foods for antioxidants are cauliflower, peas and oranges. I know what kind of recipe I’ll be searching for next week!

    Oh those artichokes are gorgeous. They are just pitiful where I live… And then the tomatillos! Jesus, you’re killing me. Haven’t had tomatillo salsa for ages. They don’t even exist here.
