Truth be told, these are my favorite types of meal Truth be told, these are my favorite types of meals… platters where you can just pick at them while sipping wine and catching up with a friend. Chances are, if you come over for a meal, you’re getting an assortment of things to nosh on, maybe a mix of homemade appetizers… but just an array of deliciousness you can snack on whilst enjoying the evening. 

I’ve been wanting to make a lox platter for awhile now, so here we are. I sprinkled some Everything But the Bagel seasoning onto smoked lox and then added sliced cucumbers and radishes to the platter along with sliced bialys and crackers. Dipping items are a must so I included hummus and tzatziki. A fun platter just to nibble from, but a bialys sandwich with everything stuffed in it was pretty perfect too. Hope that gave you a little bit of inspo for something you can easily whip up too!

Some days it can be hard to find the sunshine, especially a day like today. I can’t make sense as to why things like today continue to happen while people spend copious amounts of energy worrying about banning books and drag shows. Make it make sense. Just make it fucking make sense. It doesn’t. You can’t. Until it does, use your voice. Show up to meetings. Sign the petitions. Text ACT to 644-33 to get involved (I did). Be so loud that you can’t be ignored, until things change. Thirteen school shootings this year. When is enough, enough?

But there’s a new asshat in town… 🙄 Clifford is now a freaking rockstar. His tumor and age have slowed him down a LOT and he virtually never misbehaves, and we are seriously so proud of him. Lola, on the other hand, is still full blown PUPPY. Tonight I’m assembling a gate to replace the wooden one she ate through. 😂 Berners love wood and she is OBSESSED with being in the kitchen. So one new metal gate coming right up as soon as I can figure out how to put it together.
Last week when I met the owners of the new French Last week when I met the owners of the new French bakery in town, I told them how happy I was that they were opening … because now I had an endless source for gifts for my mom’s future birthdays and Christmases. She was born in Paris and we’ve grown up with a healthy appreciation for French things … starting with their pastries and baguettes, but so much more. My daughter took her first trip to Paris last year and thoroughly enjoyed the croissants there and she deemed the ones at @chocolatinenj just as perfect. No surprise there since the owner is a French pastry chef! If you’re local and haven’t been, do make a point to stop in and visit. They’re open Wednesday through Sunday and have a wide selection of sweet and savory items and a few French retail selections as well. We’ve tried the macarons, the Croque Monsieur, the croissants, the tomato tarts, the baguette … basically we’re working our way through their display case in due time. Don’t miss this one - enjoy!
People complain about how much time is spent on ph People complain about how much time is spent on phones sometimes, but if it wasn’t for phones. I wouldn’t have these awesome little snippets of them growing up. I only wish I had more. Appreciate and document the little mundane things, for they are the very fabric of your life.

ARF/5-A-Day #28

The Husband worked late tonight and Nicholas and I were left to our own devices. When I picked him up from Summer Camp this afternoon, we passed by the grocery store, and I got a request for “cheese doodles.” Although he’s had them before, I didn’t know he knew what they were called. I think it’s Grandma’s influence, since they’re a particular guilty pleasure of hers (thanks, Mom!).

Apparently, Cheese Doodles was a hot topic of conversation this afternoon between him and one of his buddies (DH!). The other topic? College. He informed me that he’s going to college (I’m very pleased to hear this!) with his friend and then he’ll be a grown-up and a boss. I asked him what he was going to do in college and his response was, “I don’t know, Mama, I’ll see when I get there!” Well excuuuuse me!

So there we were on the way to the grocery store to fulfill the sudden Cheese Doodle Crisis, and I was trying to get inspired for dinner. I had a bunch of very fresh, very ripe tomatoes from the Farmer’s Market on Sunday and decided to go with Garden Tomato and Basil Pesto Pizza since all I needed was the pizza crust. Believe it or not, the recipe came from a Benefiber ad (I skipped the Benefiber part). It was so, so good and went from start to mouth in 15 minutes – can’t beat that.

As a side dish, I went with “Cheaters” Stuffed Artichokes, a recipe I found from Mixed Salad Annie. You all know how much I l.o.v.e artichokes. I’ve never made stuffed artichokes at home before, though I do get them in restaurants. Just too labor intensive, or seemingly so … which is why Annie’s cheaters version was perfect. I will definitely be making it again – a very close replica of the real thing, and so quick to make! OK, enough rambling from me — onto your round-up. Until tomorrow…

I came across this site for “irked pincushions” and thought you guys would get a kick of them. Very appropriate for an ARF/5-A-Day roundup!

Garden Tomato and Basil Pesto Pizza
Recipe courtesy of Benefiber
1 (12-ounce) prebaked pizza crust (I used Boboli)
2 tablespoons pesto
1 cup (4 ounces) thinly sliced fresh mozzarella cheese (I used shredded)
2 cups chopped tomato (about 2 large) (I sliced instead)
1/4 teaspoon crushed red pepper
1/4 cup thinly sliced fresh basil

Preheat oven to 350. Spray crust with cooking spray. Place crust on a baking sheet. Bake at 450 for 10 minutes. Spread pesto evenly over crust, leaving a 1/2-inch border. Top with mozzarella cheese and tomato; sprinkle with pepper. Bake at 450 for 5-10 minutes or until cheese melts and crust is golden. Sprinkle with basil.

“Cheaters” Stuffed Artichokes
Recipe courtesy of Mixed Salad Annie
one can of artichoke hearts, drained and rinsed in cold water
A handful of black and green olives – cut in half
two cloves of minced garlic
handful of chopped fresh parsley
couple of tablespoons of grated Parmigiano or Romano Cheese
couple of tablespoons of extra virgin olive oil
about 1/3 cup of seasoned breadcrumbs

Preheat oven to 375 degrees. Combine all the ingredients except the breadcrumbs and place in a small oven-safe casserole dish. Sprinkle with the breadcrumbs and drizzle the top with a little more olive oil. Bake for about 20-25 minutes until top is golden brown.

    Just when you think you’ve cooked it all, another breathtaking recipe leaps out at you from around the next corner or behind the next tree. I just hope for enough time and strength to prepare all of these–hey–bet the ARFs will help with that.
