Regular readers may remember back in July, I mentioned I landed a freelance writing assignment for Cooking Light. My first article went live on their website this week. If you go visit Cooking Light, you’ll see a picture of delicious Corn Chowder. THAT’S my article! How cool is that?! The direct link is here, but go on, go through the main page of Cooking Light’s website and see my piece in all its glory. I’m so tickled to see it there… it’s one in a series, so stay tuned for more.
I had two catering jobs to get done today and by 9 am, I was already into my third recipe and was grooving right along … until the kitchen started smoking up. The smoke was pouring out of the oven, and recipe producing grinded to a quick halt. It’s not heating properly and I can’t figure out what was causing it to smoke, so that’s tomorrow’s project. Luckily I had cooked enough to be able to complete the orders, but it was definitely touch and go.
After running a few errands with Nicholas, we ended up relaxing for the rest of the afternoon, doing absolutely nothing, and it felt so good. It’s been a crazy, busy week, and from this afternoon on, I planned nothing for the rest of the weekend (visiting the farmer’s market tomorrow morning doesn’t count) … we need it, and with the grey, dreary weather outside, it’s perfect timing.
A few nights a week, we pop some popcorn, drizzle it with a little bit of melted butter and Parmesan cheese, and relax and hang out with Nicholas. Lately, every time I smell the melted butter, I get an instant craving for lobster. Since I wasn’t planning on cooking dinner tonight, we went out in search of lobster. To keep it easy and cheap, we ended up at Charlie Browns. As luck would have it, on Friday and Saturday nights, they have a $13.99 Lobster Bake special — perfect, satisfying my lobster craving, and keeping the bucks in my wallet.
Nicholas has never seen lobster up close on a dinner table, though he is very fond of saying hello to them in the seafood section of the grocery store. He was intensely curious, yet didn’t want to come near it, shrieking with glee when The Husband moved it towards him. And, of course, it elicited a barrage of endless questions.
“That’s a fish, Mama?”
“Ewwww!”
“Is it still alive?”
“No, it’s dead.”
“Yuck. Is my pizza dead too?”
“Is your corn dead?”
“Can we eat my fish that are in my room?”
“Would they cry if we did?”
It’s always fun to see how his mind works.
OK folks, I’m calling it a night. Until tomorrow…

Don’t kids ask the greatest questions?! Congratulations on your Cooking Light publication. I love cooking light and look forward to getting it every month. For some reason, I can’t see any of the icons or pictures on their web site, so I have to “feel” my way around. Glad that you had a direct link!
Congratulations from the neighbors on your article. And to think I knew you when you were just cooking up great dishes. Luckly that has not changed. This is one of many great articles to come.
