Hard to believe we’ve been doing the ARF/5-A-Day for 37 weeks now – wow! I’m so glad everyone has continued to join in week after week, filling our eyes with such delicious, but healthy, foods to inspire us.
I kept it easy tonight for my contribution … I took fresh mushrooms and sliced them up, and added them with sliced onions in a pan with olive oil, sauteeing them slowly until they were a nice golden caramel color. When it was done, I added a bit of salt, pepper, garlic and fresh spinach, letting it wilt. While doing that, I cooked some linguini and roasted fresh tomatoes from Sunday’s farmers market in the oven. Once everything was done, I put it all together … Pantry Pasta, full of fresh veggie goodness. Of course, with The Husband and Nicholas both detesting spinach and mushrooms, I kept theirs veggie-free. More’s the pity, and more for me!
