ARF/5-A-Day #57

by Cate on February 14, 2007

A very unproductive, total loss of a day, so I’m actually secretly glad for an ultra-short ARF/5-A-Day roundup today. At least the day is going to end beautifully … finally, there is snow on the ground. Nicholas has been waiting patiently for snow to play in and build a snowman with, and this winter has been disappointing in terms of a typical Jersey winter. Not one stinkin’ inch of snow all season, but it looks like he’ll wake up to a very white morning. Nice.

Newcomer More Cheese and Bread, Please starts us off this week with the veggie-packed Healthy-ish Lasagna:

Daily Unadventures in Cooking takes cranberries this week with her delicious looking Cranberry Oatmeal Muffins:

Cooking is Medicine in Mississippi goes the fish route with her Baked Salmon with Roasted Sweet Potatoes:

Cook. Craft. Enjoy. takes cranberries too with the very unusual Cranberry Walnut Quinoa Salad:

And as for us? I made the Roasted Tomato and Tortilla that’s on the cover of the current issue of Vegetarian Times, and it totally hit the spot. Recipe to follow later this week. Promise.
