I spent a large part of today out, and with dinner company coming over this evening, I wanted to keep things simple, simple, simple. I even managed to narrowly avoid a trip to the grocery store AND finish off three opened boxes of pasta from the pantry. How’s that for pantry cooking?
I did the Cinnamon Pancetta Carbonara for a main course, because you can’t go wrong with that one, though this time, I left the cinnamon out, knowing they wouldn’t like it. For a starter, and my ARF/5-A-Day contribution, I went with BLT Bread Salad from the new issue of Cooking Light magazine. This one was really nothing special, and I won’t be saving the recipe. There are just too many other good salad recipes out there. Onto what everyone else did for tonight’s ARF/5-A-Day roundup.

Two years ago today… road trip! If it wasn’t for a mini-vacation next month, and a roadtrip in May, I’d say it was time to go back.

Wow…THREE opened boxes of pasta! sounds like something my mom would have in her pantry! I don’t keep pasta as, for some reason, I’m not a big fan. I haven’t gotten to look through my magazine yet, but I’m looking forward to it.
LOL, yeah, getting rid of three half-empty boxes made my night. :) I ripped out maybe 10 or so recipes from that issue. I found more in last month’s issue, but some months are better than others. ;)
