Usually I don’t cook breakfast. Everyone just grabs a bagel, a bowl of cereal, a quick egg sandwich and that’s that. Maybe one weekend a month or so, I’ll actually make a big breakfast, depending on how my mood and time strikes. Yesterday was the day.
Of course, as I sit down to the table and notice The Husband not eating, I ask him why. His answer, “I don’t usually eat a big breakfast,” just reinforces the reason why I usually don’t make them.
When Nicholas gets in his pancake phase, I’ll make a ton and freeze them, and the same thing for french toast. That way, we have them on hand for him, but other than that – big breakfasts don’t happen too often.
As to what hit the table yesterday morning? I made a quick batch of french toast and an oven pancake. The first time I made the Dutch oven pancake was nearly two years ago, and I forgot how easy it is, and how much I like it. It’s hard to describe really; the term “pancake” doesn’t really fit, since it’s a bit more on the eggy/souffle side, slightly custardy … delicate, slightly sweet and oh so good. It’s certainly simple enough that you can easily fit it into your weekday breakfast routine … as long as someone in your household eats breakfast. Here? Just more for me to nosh on during the week.

I L.O.V.E breakfast for dinner! I do eggs quite often because they are so easy and are a comfort food to me. Friday late-night I made my dad’s “famous” pancake recipe for my roomie’s friends. It was fun andtI’ll be posting that recipe soon.
Ooo, I am glad that yesterday was a “big” breakfast day, because that oven pancake looks and sounds divine!
I second that Claire. Breakfast for dinner is great. Cate, I took one look and thought it was some sort of pizza. I think we need a breakfast themed dinner.
