And lastly, my own contribution. After being in an all-day meeting today, I just didn’t have the energy to spend too much time in the kitchen tonight, so I was looking to keep it simple. I ended up going with a Chopped Bacon, Lettuce and Tomato Salad. I haven’t made this one in awhile, and it never fails to disappoint.
