Sometimes simple is best. It was 5:30 pm and I realized I had no idea what to make for dinner. Hadn’t even given it a thought until then, getting distracted with work and a painting project. A quick rummage through the fridge unearthed a half-package of grape tomatoes and a plan was born. I tossed the tomatoes on a baking sheet, and drizzled them with extra virgin olive oil and a smattering of cracked black pepper and sea salt. I popped them in the oven at around 375 and let them do their thing. While they were roasting, I put a big pot of water on the stove. After it boiled, I tossed in some thin spaghetti. Once cooked, I mixed the spaghetti with the roasted tomatoes, shaved Parmesan cheese, and a little bit of butter and called it dinner. Was it ever delicious … managing to use things I had on hand, and qualifying as my ARF/5-A-Day contribution, it was perfect. Now for what everyone else made…
