These days, with a fast food joint located down practically every street, it’s hard to convince kids sometimes that life exists beyond McDonald’s chicken nuggets. Not only that, but that homemade chicken nuggets were, gasp!, actually better! How could they be better when they don’t come as part of a Happy Meal, right?
Nicholas was no exception. Although he tends to be a little picky about fast food, he does have it on occasion, and when I mentioned that I was going to make him chicken nuggets at home, he didn’t want to hear any of it. It wasn’t until the third time that I made them could I actually convince him to try enough of it to really give it a chance. And then? He succumbed and admitted, that yup, homemade chicken nuggets really ARE better than what you can get at McDonald’s, happy meal toy notwithstanding. I’d also hazard a guess that these are a tad bit healthier to boot.
Homemade Chicken Nuggets
2 lbs skinless chicken breasts, cut into bite-size chunks
dry breadcrumbs
1/2 cup milk
1 egg, mixed with the milk
Dip chicken in egg and milk mixture, then toss with bread crumbs, coating well. Brown in a little oil until golden. Serve.
We make them with a bit of Parmesan cheese and dry mustard in addition to the breadcrumb and egg and bake them off in the oven. Even kids who profess not to like chicken wolf them down. :)
Cate, those look tastier than anything coming out of a fast food joint.
